    Today I made flapjacks with honey, raisins and seeds, and some melted chocolate on top! Got around 8 large slices for lunchboxes next week.

    An egg free, wheat free, almost dairy free chocolate cake that was tasty so the point where people wouldn't be able to tell the difference between that and a 'normal' cake! :D

    Today I used an overripe pineapple to make pineapple muffins, using a banana cake recipe I have.

    Today I learnt overripe pineapples are very juicy and don't make great muffins (as the children said 10 out of 10 for taste, but nothing for presentation)

    Made a large tray if flapjacks and drizzled choc over them so nothing special here today, but they do smell yum.

    Sorry for the long post... I'm quite excited!

    I was one of those people who can knock out a tea loaf if needed, but not much else... then I joined a knitting group and was required to make cake for the girls every now and then. So I tried Lemon Drizzel & spiced fruit buns...

    Today is a significant anniversay for my husband at his company, so instead of him spending money we justify afford in a supermarket, I offered to bake!

    So today I have baked:

    - Spiced Marmalade Buns (forgot to add the fruit, doh! and recipie called for juice & zest of 2 oranges* but I didn't have any so popped some marmalade & bottled lemon juice in instead!)

    - Jam & Coconut topped sponge traybake squares (fluffy like school used to make!)

    - Maple & Chocolate Cornflake Crisps (should have been ricecrispies but I didn't have enough and as I didn't have any golden syrup* I used some Maple-flavoured syrup and some made-from-scratch sugar syrup instead).

    And I made enough so that I don't have to bake again before Wednesdays Kniting group :) I think I might be able to call myself a baker now!

    ** But I do think I need to get in some more staple ingredients!
