My friend in the US said they use a white batter to make colours extra vibrant by using only egg whites but it doesn't taste very good apparently. Here's one I made last year (unintentionally looks like a pride cake :rotfl:)

    Oh i was recommended to buy the gels :( but if you dont think they are very good, i might buy the pastes see how i go with those, i know the american ones look fab dont they

    Oh wow that is certainly not what mine looked like, mine was very insipid looking :) that looks gorgeous. You can actually buy the white cake mixes over here, with american foods, but they are quite expensive

    Thanks :o Basically what I did was make a Victoria sponge mix. So for 2 layers I used 6oz of Stork (tub, not block version), 6oz of white caster sugar beating them together until they are very pale, then added in 3 eggs and folded in 6oz flour. I divided them into two bowls and using Wilton colours (you only need the primary colours, I used poppy red, buttercup yellow and royal blue) and mixed them carefully without knocking out the air - you need about 1/4 teaspoon, maybe less as it doesn't take much. Filled/levelled 2 x 20cm/8" tins and baked on gas mark 3 for about 18 minutes. Repeat this again twice so you have 6 colours (red/pink end up the same so it's pointless baking 2 layers).

    I filled mine with vanilla buttercream replacing milk with double cream to make it extra indulgent and dyed it the same colour as the sponges :)

    Couldn't get the idea of chocolate cake out my head tonight so have just made a couple of Devils Food cakes and popped them in the oven. Checked the clock and it was 1.25am ! Cake for breakfast ?:D

    3.30am Update,
    Cakes out and quality tested by myself and OH whilst still warm with a mug of hot chocolate made with cacao, nom nom nom.
  • 2day I made rock cakes and 2moro is goin 2 b my first attempt at pastys coz me n the kids love but they r expensive to buy now!! Will let u know how I get on :)
