It's 100% wholemeal so it's risen fine. You'll never get the same lift with homemade bread as you do with bought because of the process they use.
Well I can live with that. I just felt that my bread was not as good as it could have been.It's really easy to default to cynicism these days, since you are almost always certain to be right.0 -
That looks like a good rise to me, but if you sub in a little white flour for some of the wholemeal you can improve the texture and sometimes the rise. E.g. rather than a 50/50 ratio (which I like, but is a different sort of bread really) even just subbing 50-100g of the flour can give good results
I often add a little melted butter and/or some milk to mine too (milk substituted for some of the water), particularly when making white rolls, as it makes them softer and that's what my OH likes for sandwiches.

If you dont have any bread tins, you can always roll the bread dough into a cylinder shape if you know what i mean, and put it on a tray either with grease proof paper, or even some flour.
Also, for extra flavour, you can glaze the dough and apply some seed of your choice, such as sesame seeds, or oat seeds, and even poppy seeds, which are all good. You are best to do this before placing in the oven, or before you proove it (rising process)
