  • I've made 36 cupcakes :o

    Have got loads of eggs as I can now get them for £1 a dozen for free range ones courtesy of someone my dad works with who keeps chickens :jSo thought I'd use them up as I tend to just throw them away. So my work colleagues are in for a treat tomorrow! A mixture of vanilla ones and chocolate ones with buttercream icing and various toppings ( marshmallows, chocolate chips, chocolate sprinkles etc )
    Going to get to grips with food shopping again, starting February!

    Got married to my lovely hubby on 12/11/2011 :D

    I did a loaf of very basic white bread which DH likes. Also a batch of wholemeal date scones which didn't rise very well - couldn't figure out why until I remembered I'd taken the foil liner out of my oven and forgot to replace it.

    One day I will have a lovely new oven with a seal that doesn't leak!

    I've got a bread pudding in the oven as we speak! 1st time i've made one, so hop it tastes good. I had to use low fat spread in it, as have not butter...

    Hope it turns out ok!

    Here is recipe

    220g stale bread
    110g sultanas
    50g sugar
    50g butter
    1 egg
    1/2 tsp mixed spice
    milk

    break bread into small pieces, and soak in water for 1 hour.

    Strain all water from bread (as much as poss-till its nearly dry)
    mash bread with fork
    Add sultanas, sugar, butter, mixed spice and egg and mix.
    Add milk until mixture's runny enough to drip from a spoon.

    Bake for 1 hour, gas mark 3

    Nothing today but had a evening baking last night after a busy day at work.

    Made: bananna muffins,
    Shortbread,
    Biscuits,
    Cheesecake.

    Yummy!

    Also prepared 2 main meals.

  • I made some rather flat rye bread yesterday. First time I've had the patience to let something rise overnight! It's actually very tasty, but I let it bake too long so the crust is a bit crunchy for my tastes. And of course I didn't use a recipe or write anything down, so I'm not sure I could make the same thing again.

    I really want to make proper rye-bread like we used to get from a polish market stall, this pre-siced stuff. Can't remember what it was called! It had a very open texture (lots of bubbles!) and was quite stretchy, almost plasticy/rubbery with a glossy crust that was delicious and chewy. It definitely had carraway seeds in it but other than that I don't know. Anyone have any ideas for a recipe to make somethibng similar?
    I'm going to try making mini shepard's pies in pastry cases later. Should be fun!

    I'm going to have to try my hand at making rye-bread as I do love it so. I bought a loaf last Thursday from an "artisan-type bakery" and it was THREE POUNDS. That has caraway seeds or at least ground caraway in it and it is so delicious and is still going strong but I'm not paying three quid ever again

    Shocking the price of stuff in bakeries isn't it? I am happy to pay more for things that are hand made and use good ingredients, but I was looking in the window of a bakery today and a madeira cake exactly like the one I made the other day was £2.80!! A madeira cake is the simplest thing in the world, uses hardly any ingredients and takes hardly any effort. I was honestly gobsmacked.

    And then I phoned DH to tell him how much money my obsessive baking saves us :rotfl:
  • I try not to buy stuff from bakeries since I discovered how easy it is to make it yourself. The macaroons took me 30min to make, and it was the easiest thing in the world. Plus it's more satisfying, and as I don't have electric beaters I can almost pretend that I'm burning off enough calories to balance all the cookies I keep making...
    I will make an exception for bagels though. I made them once and it took forever and was really hard work! You have to knead them for 30min, I thought my arms were going to fall off :D

    Just got a gammon joint (small one) resting, and have the bottom part of a 'queen of puddings'- the custard part, in the oven just now. Used up the rest of my breadcrumbs for it- first time I tried it so hope it is good ;).
    Ermutigung wirkt immer besser als Verurteilung.
