    I've been Money Tipped!
    Dh baked his first ever muffins yesterday as a surprise breakfast in bed for me! Lemon and poppy seed ( my favourite flavour) banana maple and um...unsweetened (literally) chocolate. Needless to say, I had a bite of each. They were good, even the not sweet chocolate ones (though I did recommend some sugar next time).

    So that done I was doubly amazed to get waffles this morning ....I'm going to get ousted from my kitchen if I am not careful!


    This afternoon I'm tired but wanted to bake so he's put together a pistachio and cardomon cake under my guidance. What a guy!

    I have made my two standbys.

    Banana loaf (I take them to work, because that's where I get the ripe bananas) and Lemon Drizzle; I also popped baked stuffed nectarines in the oven, as DS requested them 'as they are one of the foods that should be hot that I don't mind eating when they're cold'.

    (He's 'only' 19 :rotfl: not really a fussy eater but won't touch leftovers or 'wrong' foods - I have lots of little tricks to 'solve' this ;))

    princess - invest in a timer, i think most people who say they can't cook tend to forget about things baking in the oven, so a timer will remind you!

    If you have a (reasonably up-to-date) mobile phone they usually have a timer function;)

    I use mine if I am doing two cakes (for instance) with different cooking times (see above post)

    Just used half a block of the Anchor butter which I bought half price at Mr T last week to make:

    a dozen plain cakes which I will top with buttercream and the free sugar butterflies
    a dozen mini choc drop muffins
    half a dozen choc drop cakes
    3 large choc drop muffins

    Had to use different size cake cases as run out of the normal sized ones once I'd made the half dozen choc drop cakes. Had a mini muffin tin which has 12 holes and had just enough left to make the 3 large muffins.

    Haven't made cakes for ages - think I should have just made a 4 oz mix rather than the 8oz that I made.

    Will definitely be freezing most of them otherwise DH will eat the lot in a couple of days:mad:. He can have a couple a day in his lunch box - I won't let him know how many I've actually made:T:T:T.

    DD and I made these yesterday, will post a photo later as it's on DD phone. They were lovely.

    Muffins that taste like doughnuts. (But without all the work and without the frying)!


    1 3/4 c (all purpose) flour
    1 1/2 tsp baking powder
    ... 1/2 tsp salt
    1/2 tsp nutmeg ( we didn't add)
    1/4 tsp cinnamon (we didn't add)
    1/3 c vegetable or canola oil
    3/4 c white granulated sugar
    1 egg
    3/4 c milk

    Combine dry ingredients. Mix liquids in separate bowl. Add liquids to dry and combine together well, without over beating. Spoon mixture into prepared muffin tins. Bake at 350 for 20-25 min.

    While muffins are baking prepare sugar topping.
    1/4 c granulated sugar (would half next time)
    1/4 tsp cinnamon (didn't use)

    While muffins are hot, dip into (1/2 c) melted butter (will half next time) and roll into sugar & cinnamon mixture.
