    Has anyone made mini Victoria sandwich cakes - I got a baking tin in sainsbobs yesterday. They had the tins in Lake... catalogue but more expensive.

    I'm jumping in here :) I've just got myself a Panasonic bread maker so today's bakes were two loaves of white bread...plus some muffins for the kids :j

    Sorry only just seen this.

    For the sponge:
    200g caster sugar
    200g butter
    4 eggs
    175g doves farm gf plain flour
    25g cocoa powder
    2 tsp baking powder

    preheat oven to 180c.

    cream the butter and sugar,add the eggs one at a time and whisk together. whisk in the flour, cocoa and baking powder .
    Portion between 2 tins and bake for about 25 mins.

    Once cool, slice through the middle of each cake, i use 3 layers and put one cake in the freezer for anther day. layer up with whipped cream and black cherry pie filling. Coat with whipped cream and cover with shavings of dark chocolate. Pipe cream on top and decorate with cherries and flaked almonds.

    i hate to think how many calories there are in this but i only make it about twice a year as a special treat.

    I made a "Muddled Berry Crumble" - I had been tidying out my foraged fruit freezer and tipped the contents of all the nearly empty tubs into a bowl, along with some stewed apple, and used it to make a big crumble. Mmmmm it was lovely smothered in custard!

    I won't be able to bake for a while - this is my last day of having a kitchen for ? days/weeks :eek:
    I sat last night and wrote a menu of 2 weeks meals using just the microwave. :(
    I will be using HM meals from the freezer so when I have a kitchen again - will need to cook/bake like mad. :rotfl:
