Dark Chocolate fondant pudding
125g butter
125g caster sugar
150g dark Chocolate (70% is best) I used milk and was still lovely
3 eggs
35g plain flour sifted
cocoa powder for dusting
Put butter and chocolate in a heat proof bowl, place over a pan of simmeringwater and melt slowly, resist the temptation to mess about with it but makesure it's not burning.
Whisk eggs and sugar together until smooth then add the sifted flour.Once chocolate mixture has melted, let it cool slightly and combine it with eggmixture. Don't pour the hot chocolate into the eggs or you will end up withchocolate scrambled egg.
The basic mix is now ready so chill it in the fridge for an hour or so asthis makes it easier to use later.
To cook fondants you will need ramekins, dariole moulds or small-tin foilpudding moulds.
Brush these with melted butter and dust with cocoa powder. Fill two thirdsfull and bake in a hot oven at 190c for 8-10 mins until the outside of thepudding has set but the centre is still runny. makes 4 to 6 puddingsdepending on size of the ramekin.

I baked a fruit cake for our picnics next week - caravan holiday
And a Betty Crocker packet mix = carrot cake. Like a sandwich cake with jam in the middle and my own butter icing on the top.The secret to success is making very small, yet constant changes.:)0 -
