    Oven (I have a fan oven 160)

    Cream the marg and sugar, add eggs one at a time. Add enough flour to make a very soft dough. You need the dough to drop of the spoon with just a little help and hold its shape.

    Grease baking tray and drop a spoonful (dessertspoon) of the mixture onto the tray. Leave room for the bun to spread a bit.
    Make a small hole (not all the way through) in the top of each bun. The easiest way to do this is to dip the handle end of a wooden spoon in the flour and then in the bun.

    Spoon some jam in the hole.

    Bake until lightly browned (the colour of cupcakes/buns)

    My DS's favourite.

    ps this will make lots. If you need to reduce I would use 4oz and 1 egg.

    Yorkshire Egg and Bacon pie - made with bacon pieces. Recipe from a 1981 cookery book. Economical delicious pie - can be eaten hot or cold.

    Egg and Bacon pie.
    Shortcrust pastry - made with 10ozs plain flour and 4 ozs Trex.
    8 ozs chopped up bacon - I buy the bacon pieces. I medium tomato. 1/2 medium onion. 4 eggs. Fresh ground black pepper.

    If I have made this when out of tomato - I have used mushroom or pepper.


    Line a pie dish with 1/2 HM shortcrust pastry - cheaper and superior to bought. I !!!!! the base with a fork to stop it rising. Next add a layer of thinly sliced tomato and chopped onion. Then place the chopped up bacon in the shape of a cross - so you have 4 spaces for the eggs. Break an egg into each space and season with pepper - I don't add salt as the bacon is usually salty enough. Cover pie with a round of pastry - sealing edges. Brush with milk.
    Cook - approx 30 mins - 190 then another 25-30 mins at 170. All ovens vary. I stick a skewer in to check if pie is cooked.

    Today DS (age 16) made toffee rice krispies. DS (age 14) made buns and is just putting chocolate on the top. I made Ruby Jacks which are flapjacks (recipe from the Great British Bake-off book.

    I also made (for the freezer - easy meals for next term) 2 sausage casseroles, fishcakes, and I will assemble 2 lasagnes tomorrow when the ragu has cooled. I will also make a cheese and onion pie. Seem to spend a lot of my holiday making it easier for when I return to work!
