    Hi Rubysmummy,

I bought a set of proper measuring cups, a lot of recipes I use seem to be American and it seemed easier. I've just looked and it says on them that a cup is 250ml. Hope this helps.

Where did you get your measuring cups?

    4oz margarine - I used butter. 1oz desiccated coconut.
    4oz self raising flour.
    4oz caster sugar.
    2 eggs - I used medium.
1 small orange (or use lemon)

Cook in 7 1/2 inch greased lined sandwich tin - I used a 6 inch tin and cooked for longer time.
Cream marge/butter with sugar. Beat in eggs. Then beat in grated orange/lemon rind and juice. Fold in 1/2 oz coconut and flour. Put in tin and sprinkle remaining 1/2oz coconut over cake.
Bake - centre - oven - 190 - 30 minutes or until cooked. I cooked at 180 as my oven is hot with the new fan.

Thanks for that - I made it today and it was lovely (except I'm supposed to be on a diet .. still, there's always tomorrow)!

  • First baking for many, many months here - had two 14 year olds descend for their INSET day and take over the kitchen for a competition they've entered at school.

They made devil's food cake and decorated it with chocolate chips, white chocolate curls that they made themselves, edible glitter, chocolate bunnies and some yellow fluffy chicks. Those teachers are going to have a serious munch when judging commences on the last day of term.

Oh, and as a thank you to me for letting them come here, they also made a bunch of chocolate cupcakes with homemade butter icing and, because they knew they are going to be shared with a group of mostly big, burly men - as much glitter and sparkles as they could possibly squeeze onto each one.

As an aside, they were brilliant for working in an organized fashion together - clean, orderly, waiting until the food preparation was over before getting frosting all over each other's faces - the kitchen looks like they have never been around.

    :D

Today I've made homemade pizza (including dough) and sultana scones. Both first attempts and both blooming tasty. I think my husband may love me a little more today :)
