Today the following has been baked :)
    36 fairy cakes
    A large caramel choc shortbread
    Jam tarts
    2 choc yoghurt cakes
    Choc tea bread.

Going to make some garlic and herb bread after dinner.

The majority is for the boys lunch box's this week. They opted for pasta salad so the garlic and herb bread should go nice with that.

Today was St Patrick's day and I baked a carrot cake for a friend who is in hospital. Delivered it during visiting last night and have just been informed that staff and patients thought it marvelous.

It was the Ramsay recipe with Delia's topping.

    4oz margarine - I used butter. 1oz desiccated coconut.
    4oz self raising flour.
    4oz caster sugar.
    2 eggs - I used medium.
1 small orange (or use lemon)

Cook in 7 1/2 inch greased lined sandwich tin - I used a 6 inch tin and cooked for longer time.
Cream marge/butter with sugar. Beat in eggs. Then beat in grated orange/lemon rind and juice. Fold in 1/2 oz coconut and flour. Put in tin and sprinkle remaining 1/2oz coconut over cake.
Bake - centre - oven - 190 - 30 minutes or until cooked. I cooked at 180 as my oven is hot with the new fan.

Thanks,I look forward to trying this one.It doesn't seem like a lot of coconut though, does it have a good coconut flavour?

Having read the "what was your childhood diet like" thread, I was inspired to make a HM meat and potato pie which was yummy. I also made a batch of bread rolls for packed lunches tomorrow then a rather nice fresh cream & jam Victoria sponge. X

    hi all..
well this morning I made some sausage rolls,
I have to say that I cheated and used ready made puff pastry !!
We have a super local butcher and he sells lincoln sausage meat that he makes in his shop, It so nice, and very meaty and not to fatty when cooked!
I added a finely chopped onion and a finely chopped apple,
used a little bit of egg wash and made 8 large sausage rolls, the plan was to have them for lunch - which we did, leaving 4 for next couple of days... well that was a silly idea :D they are all gone!

Made a dozen lemon and poppy seed muffins today. Only there isn't that many left now ;).

Going to have a play around this week with a hot cross bun recipe after being bowled over by Hestons earl grey and mandarin ones from W@itrose, am sure I can recreate something similar.
