    Today I hope to do:

    Pret a Manger apple cake and Banana cake from their book
    Big artisan rolls for lunches, perhaps topped with oats

    Today I have made a banana & honey loaf, and some chocolate & raisin muffins. Of course I had to try them to make sure they were ok !!

    Am wondering what to do for dinner tonight. It has been like a blizzard here & it's soo tempting just to sit in & nosh :o

    Just thought I would jump in , rarely post in O/Style. Made a victoria sponge ( just "tested" some with a cuppa ) and made some pizza dough for HM pizza tonight. Cant wait mmmmmm .I live bout an hour south of Edinburgh and its like a blizzard here too..makes you want to curl up with a hot choccie and some cake ,Cant wait to take the dog out tonight in the snow :T

    Not much of the snow has been lying here either , just enough for the dog to skid about in. The wee thing goes nuts in it. Some places have had it pretty bad though

    No baking as such today but the pilchard pie I made for tea went down a treat and there's one for the freezer. Yesterday it was 2 large loaves and a dozen rolls and date and walnut scones.

    Have you got the recipe for the Pilchard Pie I had 10 tins of the things given to me a couple of weeks ago by a friend and want to use them up

    Have just cut up a chicken and it is now sitting in a Satay marinade in the fridge for tomorrow night dinner.
    In the oven is a coconut and rum loaf. I am not sure how it will turn out as the recipe seems a bit bonkers to me and I have made every kind of cake and loaf there is. The proportion of sugar to flour is way off and there is not fat in it except what is in the milk, coconut and single egg. Oh well hey! ho ! we will see what emerges in an hour. The house does smell rumalicious:D

    Baking update..............It worked:j
    It makes a very sweet moist, not too dense a loaf with a slightly sticky, crunchy yet chewy outside.

    Set oven at, 180degC/350degF/gas mark 4 ( Remember to adjust temp if using a fan assisted oven.)
    Here's the recipe It's a chuck it all in the bowl and mix well job.
    100g S/R flour
    225g caster sugar
    100g dessicated coconut
    1 egg
    pinch salt
    120ml milk
    1 tablespn rum or 1 teaspn rum essence ( You could leave this out the smell is wonderful but you don't really taste it in the loaf. IMO)
    Mix all ingredients together well.
    Pour into a greased and lined ( Important that it is lined as the outside as I said is slightly sticky) 450g loaf tin.
    Bake for 1 hour or until golden and springy to the touch.

    This afternoon I cooked 26 short bread biscuits, a tray bake of flapjacks and 2 sponge cakes.

    In the SC is a chilli, will be boiling the rice in a wile and also have stir fry veg.
    If winter comes, can spring be far behind?
    Spring begins on 21st March.
