Pear Crumble but used crushed amaretti biscuits instead of oats in the topping (had them in cupboard anyway)

Yum, yum! Sounds delicious. Trouble is I never have any amaretti biscuits left over.

I had some absolutely disgusting bananas that were entirely black and thought it was time I did something with them, so I made banana and chocolate muffins from this book. If anyone is interested in making muffins, this is a fantastic book, one of my favourites.

Also made a madeira cake for DH using a James Martin recipe, and it turned out lovely until I dropped it while turning it out of the tin! Lucky it only fell on the worktop and not the floor but it broke right in half. It will be scoffed anyway though of course!

Made huge chicken and vegetable stew (will add dumplings tomorrow) and baked fruit cake to my mum's recipe. Just taken cake out and it smells divine...also planning to make pancakes for pudding this evening as we were away last week and missed out.
  • I haven't but DD has baked - chocolate chunk cookies, double chocolate chunk cookies, chocolate brownies, flapjack and has an apple pie ready to go in the oven for desert! OH and DD have cooked a roast too!

Roasted a chicken for dinner and will put carcass in slow cooker overnight for stock - not done it before so cross your fingers for me!

Sticky toffee pudding in the oven now - got some lovely white vanilla ice-cream to go with it (white ice-cream always reminds me of school dinners!)

Also have a big chunk of bacon (reduced in lidl) in the slow cooker with veg stock, celery, leeks, potatoes, carrots and a couple of handfuls of lentils which will be blended for soup for lunches/filling up kids

I also want to make some twinks, cookies, flapjacks and a lemon drizzle cake...but it won't be today now - might see what I can get done tomorrow night when DH is at his fight club

I hate baking , but today I made the best yet egg-free birthday cake for my wee girl, whos birthday is on Tuesday ( she is anaphylactic)

Every year I have tried various vegan or egg free recipes, using egg substitute, lard, apple sauce, oil, all manner of things -

This one finally looks edible !!

Will report back after the taste test on Tuesday lol!

Editted to add- she will be 9 - approx 8 years of disasters lol
    I don't know much, but I know I love you ....<3

I have done a roast pork lunch followed by HM rice pudding. Made chicken stock from carcass last night so made chicken, veg and lentil soup and then made a banana and apricot loaf recipe (changed the nuts for dried apricots) but made it into muffins instead, yummy!

  • DD23 baked a tray of brownies, runny middle like chocolate mud cake, smells like heaven. Her BF did gammon with honey and cloves, and roasties... I did have the gammon but am on the well known milkshake diet and must resist the choc brownies. I have a whoopsied big bar of white chocolate which will do as a treat in my packed lunches, half a square a day!
  • I made coffee cake with a coffee fudge icing which needs to be cut up to be frozen, Chocolate brownies - but I got distracted and the outside of the brownies are in need of chocolate sauce and/or custard! The middle is OK for lunchboxes this week though so I nearly saved them!

Yesterday I made soup with a chicken carcass and the end of a leg of lamb, with some pearl barley and veggies. Then a hotpot with leftover Christmas turkey and lastly "Chicken a la puppy" - the puppy is on proper food at the moment having been poorly sick so she's getting her own casseroled chicken with veggies and rice...it was that carcass that went into our soup!

There must be something wrong....the puppy gets fresh chicken and we got the turkey leftovers out of the feezer!

I baked 4 loaves of bread, 25 teacakes, and a teacake loaf with what was left, and a vegan chocolate cake!
