  • I have just baked my regular batch of wholemeal Bread today. Here is the recipe. Provided the yeast is bloomed properly, and proportions are right it's ships ahoy!

    It's a no brainer because I use a cup measure and plonk in even cups of wholemeal flour-organic, plain white flour organic and organic flahavens rolled oats for a loaf that is the right size for me to last a week.

    I've just made a lemon drizzle cake which I'll split with our elderly neighbours and I've made a chocolate cake for my team in work.

    Getting cabin fever being cooped up today and yesterday ... DH full of cold and feeling sorry for himself & it been snow / sleeting all day so not nice to go out in.
    Goal - We want to be mortgages free :j

    Today I have baked 2 lots of flapjack. 1 original (plain) and one with dried cranberries and mixed nuts in - mainly for DD's pack ups/school snack much cheaper than the cereal bars and less sugar;).

    I also made an apple crumble using up the left over apples from last week before putting the new ones in there.

    Tomorrow I will make a lemon drizzle cake and the mincemeat fruit cake Rosie posted - will need oven on for glazing ham joint anyway:D

    250g SR flour
    150g unsalted butter (I used cheap baking marg)
    140g caster sugar (never buy it, used granulated)

    grated rind from an orange and a lemon and an orange ( I omitted them as I didn't have any)

    Oven 150/ 300/ Gas 2
    Grease and line an 8" tin.
    Cream marg and sugar til pale.
    Beat in the eggs one at a time.
    Fold in the flour.
    Add the mincemeat and rind and mix well.
    Bake for 90-100 mins til skewer comes out clean.

    As I say, I made this again today, and as I was doing lots of other stuff at the same time, I chucked all the ingredients in and did it as an all-in-one cake, and it honestly came out better! I wouldn't call it a Christmas cake though. More of a nice, soft fruity sponge. Perfect with a cuppa!

    I made this the other day.I added a few spoons of ground almonds to the recipe.I'm leaving it a few days before cutting it-such self control!:)

    I made steak & ale pie today, and baked a meatloaf type thing while the pie was cooking. :)

    chocolate muffins (2 lots actually as I forgot the baking powder in the first batch :o)
