made cloutie.....aka halloween dumpling ! been pressurised into making it by my dad who is going through 2nd childhood and is demanding alsorts of stuff from his youth. Its like a christmas pudding but its not! its in a big pot in a pillowcase bubbling away. i cant get my head around how it will be like a cake if its submerged in water. also making and storing in fridge the pastry for mince pies for to be made later in the month. me thinks twinks will be rustled up too so no doubt chronic heartburn about 9pm as i tend to eat the lot.

Has anyone got a recipe for rough puff pastry which contains no butter? I know it sounds like a contradiction so let me explain.

I was in Sainsburys the other day and picked up a block of their pre-rolled puff pastry. To my surprise there was no mention of butter in the ingredients. I emailed the company to confirm this and yes there was no butter used!

The fact that there was no butter in the product actually pleased me because it means I can now give my colleague apple turnover when he visits next. (He is lactose intolerant) I would normally just have an apple tart for him.

Butter, as you all know, has become pretty expensive these days and if I could use a ruff puff pastry for my pies etc it surely would cut the price down and maybe help make the pastry that little bit quicker.
  • I've just iced my Christmas cake with fondant icing and am now going to make a Fochabers gingerbread.
  • am guessing that everyone is on their january diets :D.
today i have made a loaf of bread as my mum showed me a programme about diets and excercise that has freaked me out about things like bread so i have decided to make my own more often.

and whilst the oven was on i also happened to make my favourite spice cake which i really must stop eating ;):whistle::whistle::whistle:

    Lemon Drizzle Cake

    - because the kids love it. Also I get to use my Lakeland Loaf Tin Liners (well one of) and it makes the cake look professional and is MUCH less stressful than lining the time with a flat sheet of baking parchment.

'Tis the kids current favourite cake.

  • Over the weekend, I've made a Brandy Butter fruit cake (like a normal fruit cake, but with the YS brandy butter I picked up on Friday ;)), Cheese straws, Bread sticks, WW lemon and lime cookies, and Jam tarts. I freeze a load of it to use in lunches... Well, the bits the boyfriend didn't get to before I could package them up!

I'd love to see the recipe for the Brandy Butter fruit cake please.I've got a jar that needs to be used up.I'm not good at improvising when it comes to baking...:o

    Thanks.

This is not strictly a bake, but I've just made a lemon and ginger cheesecake using agar-agar instead of gelatine. It's the first time I've used agar-agar and it seems to have worked fine.I haven't tasted it yet.
