  • Does a microwave syrup sponge count as baking? it was delish and only took 31/2 min to cook.

    In case anyone is interested-
Crean 100g of butter with 100g sugar.
Slowly add 2 beaten eggs a few drops of vanilla extract.
Add 100g self raising flour, 30mls milk and grated zest of 1 Lemon (optional)
Put 3 tablespoons of syrup into a 2 pint bowl andput the batter mix onto. Put a plate on top of the bowl and microwave for 31/2 minutes.

    Yes it does!Sounds lovely.

It's our DD's 21st in a couple of weeks and I'm making 150 cupcakes instead of a cake! Just made a few as we are having a trial run.

DS didn't want to be left out so we're also making gingerbread reindeer biscuits.

Apple and cherry crumble, to use up some apples that were really past their best and a tin of pie filling that was best before quite a while ago :) With a crumble topping using oats and demerara sugar. I have eaten a massive chunk of it already with vanilla ice cream.
