    Six hamburgers
    • 1LB-1.25LBs Ground Beef
    • Salt (to taste)
    • Pepper (to taste)
    • 1 1/2 Teaspoons Dijon Mustard.
    • Worcestershire Sauce (several splashes)
    • 2 Egg Yolks
    • 3 Tablespoons Ketchup
    • Enough Red Onion to equally distribute in the ground beef. (I’ve had the best results putting the onion in a food processor)
The recipe is one that Gordan Ramsay used in Kitchen Nightmares USA at Lelas restaurant.

This is the first time I've actually made my own burgers, think I'll have to put in just a little bit more salt. I've used 1.5lb of good quality mince, but I had difficulty in the consistency of the burger - it was to wet which made it difficult to hold together. But a great burger, never-the-less. Will certainly give it a try again.

If it was too wet you probably added too much egg yolk. If this happens again you can add some breadcrumbs to firm it up a bit (will also absorb any fat in the mince).

Today I've baked Twinks hobnots and fruity flapjacks. Will be cooking a chicken & mushroom pie for tonight.

Feeling very virtuous today as have made ice-cream, malt loaf, a white loaf and peanut & choc crunch.. now comes the battle of staying away from it all so that it lasts at least a week!:rotfl:
Life....mmmm....still trying to figure that one out but what I do know is if I had all the answers it'd be a hell of a lot easier!!!!!!:p

I have tested my gifted bread maker so made a white poppy seed loaf, some very cheesy scones, and a banana bread. Also this isn't baking but I made my first chicken in the slow cooker, just a small reduced one but got lots of meat of it, did a curry last night and have enough for some enchiladas and a pasta bake too next week, have frozen the stock too and all the spare meat! Very impressed and all for less than the price of a packet of chicken breasts!

Made some butter and just had to make a wheaten soda with the buttermilk.
Also made another lemon curd cake as it went down a treat with everyone.

This morning I made my first ever carrot cake. Looks delicious but need to resist as I'm bringing it to a friends house tomorrow.

I defrosted and cleaned the fridge-freezer yesterday and came across three little tubs of frozen egg white.I did briefly consider putting them out,but I made macaroons instead. They turned out really well,so am making more today with what's left.So simple to make as well.:)

The second batch turned out really well, though I've eaten about five of them, just to 'make sure' that they're all right.:oThis is why I don't tend to make biscuits...they get eaten too quickly,so not good for my waistline!I'm more reasonable with cakes for some reason.
