    I hope someone can help me. Whenever I make an apple pie the filling is very liquid. I use Bramleys and add sugar but no extra liquid, but when it's cut into there's LOADS of liquid. How do I make a decent apple pie?

    Various options:

    Mix the bramleys with some eating apples, they will keep their shape better and lose less liquid;

    Mix the raw apple with some cornflour - it thickens the juices so that the pie is not so wet.

    Cook the apple first - I made a pie this evening with already cooked apple, which I had taken a little bit of liquid off of before filling.
