    Hi everyone

Haven't baked this weekend...strictly speaking I shouldn't eat it at all as I'm diabetice and controlling by diet, plus I'm doing that by low carbing. I usually bake on a Saturday or Sunday, depending if I'm visiting friends or have visitors. None of that this weekend so I've resisted the urge. Just thought I would come in and say "Hi" though as I've just discovered this section of the forums.

well been busy baking myself as i want to get ahead of myself for christmas as want to freeze what i can, but have been experimenting to see which recipes i like the best to do that with! (is it too early to mention christmas??)

anyhoo, made a huge coffee, chocolate and walnut tray bake, frozen a third to see how that works out and have just iced the rest with a chocolate cream frosting, it is very nice but i think it would be just as lovely without the chocolate, will have to see how it freezes now

also made chorizo empanadillas, the easiest thing i know how to cook (3 ingredients) but have never frozen them, and those ham and cheese ones that thomasina miers did on her show, and very tasty they are too, ditto on how well they freeze

Oooh choc concrete!! I used to love that at school!! Do you have a recipe?

Yesterday I made vanilla cupcakes with vanilla frosting for the in-law's anniversary party.

On thursday I will be making gingerbread cupcakes, apple and walnut cupcakes and a fruit tart to take away with us.

I eat a lot of porage oats and always sift out the fine 'dust' you get mixed in the last handful at the bottom of the pack and save it. Wanted to try something different as I usually make scones or add it to bread, so I made oatcakes today. I had no idea they were so easy to make. They tasted absolutely delicious. Certainly won't be giving any more money to Mr Nairn from now on!
If I'm over the hill, where was the top?
  • Got a loaf and some rolls in the oven just now, just waiting for them to be done. I know it's late but kids won't have anything for packed lunch otherwise and I haven't bought bread for weeks and don't want to succumb to the convenience :D
