Hello, newbie baker here! I made some choc chip cupcakes with my DD and then had a go at a loaf. The cup cakes are yummy, the bread smells yummy but is kind of an odd shape! No loaf tin so I shaped the dough into a round and put it on a tray. It has spread lol but I am sure it will taste ok (fingers crossed!

Does anyone happen to have a recipe for an everyday fruit cake. By this I mean not a heavy xmas cake type, but more of a lighter fruit cake. My son loves fruit cake and I thought I would treat him to a home made one0

Mmmm lemon drizzle cake. OH's fave. Smells lovely and I will do the icing while the cake is cooling. I have ironed OH a shirt too. Can't you tell I have seen a new Kipling bag that I fancy! :rotfl:

Try this recipe. It's from the list of recipes at the front of the May Grocery challenge. Thanks to OP.
Boiled Fruitcake
250ml (8 fl oz) water
150g (5 oz) soft brown sugar
150g (5 oz) unsalted butter
115g (8 oz) dried fruit (sultanas/raisins)
55g (2 oz) dried cherries
55g (2 oz) mixed peel
3 teaspoons mixed spice
225g (8 oz) plain flour
1 teaspoon baking powder
1 teaspoon bicarbonate soda
2 free range eggs, beaten
1. Line the base and sides of a 6-7 inch cake tin with buttered greaseproof paper. Preheat the oven to 170°C/Gas mark 3.
2. Combine the first 7 ingredients in a saucepan, bring to the boil and simmer for 15 minutes. Allow to cool.
3 Sift the flour, baking powder and bi-carb onto the fruit mixture. Fold in and combine with the beaten eggs. Pour the mixture into the cake tin and bake in the oven for one and a half hours.
4. Leave to cool in the tin. Turn out, wrap in greaseproof paper and store in an airtight cake tin.
You can tinker around with the types of dried fruit as long as the total weight is the same. Some people don't like mixed peel for example so add 2oz more dried fruit instead.

banana loaf with dates, and jam tarts. This is the first time I have added an egg yolk to my pastry and i have to admit they are delicious!:o0
