    i've just put a carrot cake in oven.

    It looks gross ( uncooked) , smells nice tho. new recipe i found in an old easy cook mag. lets hope it comes out as moist and gorg looking as it does in the picture.:D

    -Carrot & cumin scones
    -Orange cake with chocolate topping

    Made a pear & almond cake on Sunday, improvised recipe. Plain sponge but replaced half flour with ground almonds, then 2 sliced pears on top. Gorgeous:)
    Served it with chocolate sauce & vanilla ice cream

    turned out fab, was worried as it looked very dark. but hubby says it is lush. and after trying some, i must say it is very moist and moreish. def make it again. now i have more confidance.

    Today i've made a pavalova, plus chopped up lots of fresh fruit to go with it, also made some cornfalke cakes.

    I've got a potato dish in oven .

    gonna have it with sausages and veg. bizzare i know combo, but shopping day tomoz, so using up what we have fresh in.

    Orange traybake, scones, a white loaf & some seeded rolls today. Thinking about making some pastry now but having a diet coke break 1st :)

    Plain sponge traybake with pink icing (for the fussy DD) and some Twinks for the rest of us.

    Made a fish pie yesterday and used the leftover pastry into cheese straws - went down very well but I overdid the Cayenne Pepper a little :shocked:

    Hi the orange traybake is as follows...

    Ingredients
    225g/8oz soft margarine
    225g/8oz caster sugar
    275g/10oz self-raising flour
    2tsp baking powder
    4 eggs
    2 tbsp milk
    grated rind 2 oranges
    For the Icing:
    about 3 tbsp orange juice juice
    225g/8oz icing sugar, sifted




    Method
    1. Preheat the oven to 180C/350F/Gas 4. Grease and base line a 30 x 23cm/12 x 9in roasting tin with greased greaseproof paper.
    2. Measure all the ingredients into a large bowl and beat well for about 2 minutes until well blended. Turn the mixture into the prepared tin and level the top.
    3. Bake in the preheated oven for about 35-40 minutes or until the cake has shrunk from the sides of the tin and springs back when pressed in the centre with your fingertips. Leave to cool in the tin.
    4. Mix together the orange juice and icing sugar to give a runny consistency. Spread out evenly over the cake and leave to set.

    This is also nice uniced & served with custard.

    I didn't use the icing this time Because we fancied chocolate frosting :) this recipe can also be made with lemons replacing the oranges & is equally yummy HTH
