    Cup cakes are just fairy cakes in muffin cases. The recipe i use has never failed and use value flour, eggs etc:

    6oz s/r flour
    6oz marg
    6oz caster sugar
    few drops of vanilla essence
    3 eggs
    1 tsp of baking powder

    Gas 5 ....15-20 mins

    Sieve flour into a bowl and then put everything else in and mix. Add a little bit of water if needed until mixture drops off spoon easily (but isn't too runny). Half fill muffin cases then bake.

    When cool decorate

    If chocolate cakes required then use 1 tbls of coco powder (i use tesco value again) and omit the vanilla essence

  • technically not baking, but i did make a job lot of buttercream, in preparation for the 70 cupcakes I've got to bake for a first birthday party tomorrow!

    MrsSpoon- kippers' recipe is pretty much what I'll be using for my cakes tomorrow, except with unsalted butter instead of marg- the value stuff is fine, but imho, the butter makes all the difference!, and I can't say I've ever put baking powder in, and they've always turned out fine- guess there's really no right or wrong way to do these things, it's all down to personal opinion!

    Apple spice muffins with walnut & brown sugar topping, to use up some manky old apples. They're from Susan Reimer's book.

    Also just waiting on some dough to prove so I can make pizzas, but despite the heat being on quite high the house is quite cold and it's taking ages :(

    A batch of white rolls. I made 2 quite big ones for our tea time burgers and then a few small ones which will go in the freezer and come out for xmas eve buffet tea. I'm making marmalade and lemon curd tomorrow and cooking pheasant for tea....all for the first time.

    All from Nigella Lawson. I'm a huge fan of this lady's recipes. they always turn out!!
