Had a mad baking day yesterday. Organising/preping my weekly dinners on a Sunday helps the week flow! I cooked a large leg of lamb - roast yesterday, Kebabs on weds, left over for soup (will freeze). I beat out and seasoned cheap steaks to eek them out (sitting in tupperware basted with garlic and vinegar - trust me it'll be delicious - final touch - when cooking squeeze lemons over steaks - yum yum!!). Also cooked a stew of chick drumsticks/pots/carrots which we have just scoffed. One portion left over for a teenage snack or my lunch. Mince - made meatballs - froze half, rest in fridge waiting for a quick tom sauce. Reading through this sounds like a lot of meat- which is unusual for us, but all was reduced in tesco's - except for the leg which was a fantastic special offer. Probably took me a good couple of hours, but I find it really relaxing. Also coming home after work, half the dinner is done0

I've had a go at 'the best mince pie pastry' today.....from a single batch I got:
2 dozen mince pies
2 dozen mini mince pies
1 dozen lemon curd tarts
1 dozen sweet canape cases (as I had nothing left to fill them with!!)
At the same time I was making a pot of spicy thai butternut squash soup, boiling eggs for packups, cooking rice and HM oven chips for tea and reheating curry to go with them.......I felt like a proper domestic goddess......just a shame about all the washing up it all creates!!0 -
Apologies if this is the wrong forum - have searched around but am not sure where this should go!
Basically I would like to bake some cupcakes for my childrens class teachers as Christmas gifts (money v tight this year - can't afford to buy for teachers and assistants!).
Does anyone have a yummy (foolproof!) recipe for cupcakes they would mind posting for me? Are cupcakes different to fairy cakes? And do I use fairy cake cases or muffin cases? And what do I use to ice them?
Sorry for all the questions, I hope someone can help!
