I went to make some fairy cakes earlier, and found that, somehow, i'm out of sugar :( Not sure how that happened, but I don't want to go out in this weather for it, so no baking today!

Today I've made lemony trifle, chocolate brownies and chicken and chorizo stew. Tomorrow will make a meat and potato pie with a suet crust and sticky ginger cake. I always love to cook but this snowy weather makes me long for the kitchen a warm oven and the smell of baking. It's not doing my wiast line any good though!

Made a white loaf in the bm. We normally have wholemeal, mixed with granary, but was taking some for our elderly neighbour with some h/m soup and I was pretty sure she couldn't eat granary.

Then some hobnobs (my recipe always has ground ginger in), then cheesy biscuits. These are lovely, it's a basic recipe, I think the same one is on here, using 100g each flour, butter & cheese, but I've changed it to:

    Oaty cheesy biscuits
    60g plain flour
    60g oatmeal
    100g butter/marg/spread
    75g strong cheddar, grated.

Mash all together with a fork (or use processor), form into log, wrap in clingfilm, put in fridge or freezer for 30 mins.
Cut into really thin slices, put onto parchment-lined sheets.
Bake at about 160-170c (I did 160 in a fan oven) for about 10 mins.
Leave a few mins then the easiest way is to slide sheet of parchment onto wire racks to cool.
    This mix made about 70:)

I made these today...absolutely melt in the mouth..thanks!
(Although it only made about 30...I didn't have oatmeal, so I whizzed up value oats in the food processor, so maybe that made a difference to how thin I could slice my log. Still divinely delicious tho).

Morning all - I often pop onto this forum for ideas, and wonder if you could offer some suggestions on Christmas nibbles to put in the freezer.

It's mainly for if people call in unexpectedly over the holiday, or if we have people round for drinks.

I would like to do a mix of mainly savoury, but some sweet. I've done some mini mince pies, sausage rolls and a spinach and parmesan tart, but would really appreciate any ideas

    Many thanks

Yesterday I made a jam roly-poly with suet pastry and baked it in the oven. One of these days I want to try doing one in the slow cooker.

Anyway, the baked one came out really well and I had to stop my DH from eating half of it!!
