Have some cooked chicken and ham in fridge, so decided to make some patties. Made some mashed potatoes, and added fried onions to it - divided the mixture in half and added chicken and sweetcorn to one half and diced ham and leeks with a bit of cheese to the other half. Ended up with 12 good sized patties .

Trying to do a bit of baking for the freezer for over Christmas period, so did a big batch of basic scone mix - added grated cheese to half of it and sugar to the other half. Ended up with 24 mini scones 6 cheese, 6 cheese and olive, 6 sultana and 6 chocolate.:)

made girly cakes again as apparently DGs gave his cousins a few cakes HE had made! so I had to 'help' the twins make them! lmao - when I took the twins home they proudly displayed THEIR cakes (they are only 6 and tbh did most of it themselves) one of them told their mum 'It was really easy - nanny had this whirry thing (handmixer) and then we just put things in!' bless them!
as for supper tonight - Oh decided he just wanted one of my BLT baguettes............a part baked baguetted chucked in oven and some bacon lettuce and tomato filling! OH joy! didnt really feel like cooking anything complicated tonight! coming down with a cold I think!

In the latest Tesco Clubcard statement there was a recipe for white chocolate and cranberry fudge. I made some this morning, it's dead easy (it uses evaporated milk, no need for sugar thermometers etc), will sample some when it's set and if it's nice enough I'll make some more for Christmas presents.

I'm thinking of doing chocolate orange fudge as well as I thought it might be quite Christmassy, do people think that would be nice, or might it be a bit too sickly sweet?

I was going to make that, thought I may try milk choc or dark as I am not too keen on white choc.

Today I made chocolate shortbread biscuits. Fav old recipe from a marguerite patten book.
  • About to go and make nutty apple loaf from Hummingbird Bakery book. Very stodgy and wintery and generally yummy for these arctic conditions!
