    Made the Be-Ro date and walnut loaf - has risen well and is sat on the kitchen counter shouting 'eat me eat me' !

  • MILLIE :I made a date and walnut loaf from the Bero book a few days ago but it came out very dry and crumbly I was a bit dissapointed to say the least. I did think when I mixed it that it seemed a bit stiff I was going to add more water. Does anyone think that would cure the problem
    Did you do the Be-Ro recipe where you soak the dates plus a pinch bicarb in boiling water for 15mins before adding the lot- water and dates - to the mixture. My mixture was very soft and the final cooked result quite moist. Maybe yours is a different version of the book?

    My future dil and son came for supper and I decided as she is veggie thqt we`d have the parsnip rosti kievs that were in the Woman and Home Christmas magazine. Must have put my brain to bed as I realised half an hour before they came that I`d put grated carrot instead of potato so was frantically trying to coat them in potato before they came!

    It tasted ok thank goodness but I`m mortified for being so stupid!

    I made a chicken & broccoli pie using the leftover chicken from last night's roast and some sad looking broccoli that was in the fridge. I used the Jamie Oliver 30mins meals chicken pie recipe for the sauce bit, and just whacked a pre-rolled puff pastry lid on it. Easy peasy and a huge hit with DH and the kids. We had it with peas and mash, perfect after such a cold & horrible day!

    I keep seeing recommendations for the b3-ro cookbook so I may have to investigate how much they are :D

    Today I will be making scones - I will deff go for cheese and pepper scones but then I will experiment with other flavours. May try something like apricot and white choc..................

  • I have just made a cheese, tomato and garlic sausage puff pastry tart and it smells wonderful, but the best bit is that is was sooooooooo easy to make, going to make sure i have pastry in the freezer all the tome now to whip up something likethis in a hurry when i need a quick meal for the kids.

    you can buy the bero recipe book from Morrisons or online from the bero website
    http://www.be-ro.com/f_about.htm
    it costs £1.50 from the website and I think its the same price in Morrisons.
