Been busy in the kitchen today!
Chicken Pasanda curry for the freezer (enough for 4 meals)
Chicken Madras for the freezer (enough for 4 meals)
roast pork belly and roast potatoes for dinner and I managed to get perfect crispy crackling for the first time ever! Plus some left over pork to have in a stir fry later in the week
apple sauce to go with the pork (some has gone into the freezer)
apple crumble for dessert with some left over for tomorrow
left-over stew pasties for lunch boxes
Nigella's Sweet And Salty Crunch Nut Bars
lamb in the fridge marinating in moroccan spices for a tagine tomorrow night

After my big success with the Be-Ro boiled fruit cake I'm going to try the tesco Pineapple, fruit and cherry cake, but please can anyone tell me: the recipe does it in a 2lb loaf tin (it's a 2 egg mix with 225 g dried fruit, a 227g tin of pineapple chunks and 100g glace cherries) I'd like to do it in a round tin, so can a clever person suggest a) what size tin and b) how long I'd cook it for please ?0

made the Tesco cherry pineapple and coconut cake at the end of last week. Its an excellent cake, easy to make and keeps well ( if you can!) stays moist - the family loves it. I made it in a loaf tin as recipe but Im sure it would be fine in an 8inch round or 7 inch if you like it deeper.
Hope you enjoy it as much as we did.

Oh and i would cook it about the same time and test with center with skewer or similar - if its done it will come out clean. If not then cook a little while longer and if it is looking too brown then either reduce temp or cover loosely with some foil to stop it going too dark.HTH0

Made a couple of onion and cheese loaves. They smell great, so I will try to resist the temptation of cutting into them too soon , whilst they are hot.0

A tray of twinks/hobnobs (used crystallised ginger and wholemeal self raising flour. Really good. I'm not buying anymore shop bought biscuits. Gonna make my own now):j:)
Wholemeal/white bagels. Needed more salt and will use a lower oven setting next time. Really pleased as this is the first time I made them.:):)Sealed Pot Challenge No 089-Finally got a signature.:rotfl::j0 -
The tesco pineapple, cherry and coconut cake (without the coconut as we don't like those little bits that stay in your teeth ). I did it in a bread tin as in the recipe as I couldn't find my round tin, and it's very good, very moist and sticky and OH likes it a lot. Result !0

bara brith - i felt like baking but have run out of butter/marg and did not fancy traipsing to the co-op so found a recipe for this that contained all the ingredients i had to hand.. tastes great - i will definatly make it again.Dogs return to eat their vomit, just as fools repeat their foolishness. There is no more hope for a fool than for someone who says, "i am really clever!"0
