  • I have just rediscovered...Bubble and Squeak which you can have with any cold meats really.
    Leftover cabbage or any green veggies would do... then I added potatoes boiled and mashed. 1 Onion and some Garlic Plus a mix of herbs or what ever your taste buds say. Fried in olive oil and sunflower mixed. Really tasty. Pudding was a Yogurt Cheesecake with fruit that we grew in the Garden..Raspberrys and Blackberrys. Still cant believe how much soft cheese is required though...mmmm

    Tonight, I am going home to bake my leaving cakes for work (much more original than buying and much more MSE minded)

    I am making chocolate orange muffins, which are an adaptation on my previously sucessful banana chocolate muffins. (Both borne of having old fruit about to hit the dust)
    I am also making some giant chocolate chip cookies, at the request of one of my team members.. and we are talking literally GIANT here... and a gingernut biscuit cheesecake type thing.

    The only thing that's worrying me is physically carrying it all the way to work, on the train, and not trashing it or eating it myself! Wish me luck! :rotfl:

    Attempt at lime polenta cake - a recipe mixed form different lemon/lime polenta cakes. It is just cooling down on the rack - hope it tastes good.

  • Banana and pecan loaf cake. It took an hour to bake rather than the usual 40 minutes, but still looks and tastes good :)

    Oh, and pizza for lunch as MIL was here - fish mmmmmmmm

    I've just made a gingerbread loaf for my mum for her birthday. Probably should have doubled the mix for the tin I had but it rose nicely so doesn't look too bad!!

    I just tried Jamie Oliver American Pancakes and they tasted like bloomin' eggy bread!!!!
    ughhhh....
    the annoying thing is that the reviews everyone puts down (apart from one person who said it was eggy) were all saying "oooh they came out great!"
    how frustrating when all i have is an eggy mess and a kitchen full of smoke!!!!

    My dad's in hospital and he loves fruit cake, so as I'm going up there tomorrow I really wanted to take some for him. So today I've made 1 fruit cake recipe, but divided into 2x 1lb loaf tins. It's one I've made loads of times, it has pineapple in like the Tesco one. So for one thing I can confirm that freezing half of a large tin of crushed pineapple is just fine:)
    I wouldn't have wanted to just eat it from the freezer, but it was absolutely fine to add to the cake as normal.

    I'm going to stay with a friend who will also take me to visit him, so wanted to take her something, So have also made a ginger cake in the breadmaker, but with a couple of variations.
    Having read all sorts of recipes, I added the grated zest of an orange, about half a teaspoon of mixed spice, and a cupful of raisins. The smell was soooo tempting, we only left it to cool for 10 minutes before cutting it in half and sampling. I've made it without the additions before and it was good, but this is way beyond good, it's deeelish!
    (Btw I was going to cut it in half anyway, we haven't eaten her share!)
