I made a date and walnut loaf from the Bero book a few days ago but it came out very dry and crumbly I was a bit dissapointed to say the least. I did think when I mixed it that it seemed a bit stiff I was going to add more water. Does anyone think that would cure the problem?0

Hi
Baked a rhubarb and pear crumble.Sealed Pot Challenge No 089-Finally got a signature.:rotfl::j0 -
Made an impromptu apple, walnut and raisin cake. Just chopped 2 eating apples which were going a bit wrinkly, added a handful of raisins and a handful of walnuts, beat 2 eggs with the fruit and nuts, added some oil and sugar, then bunged in some self raising flour. As the mix was quite dry I added some oat milk until it had the consistency of a thick batter. Baked it low until it got quite golden, then sprinkled some sugar on top. Then it went under the grill and the sugar top got a bit burned.
However the cake tasted really nice! I can never follow instructions somehow, and stuff seems to turn up ok, for the most part! Perhaps this winter I shall start baking more cakes.
But my main plan is to start (again) to bake bread. I have a starter for sourdough ripening in the kitchen waiting to be used soon!Finally I'm an OAP and can travel free (in London at least!).0 -

Thank you for the inspiration, I was just wondering what to cook for dinner and have a half pack of polenta that is crying to be used. Sorted!
But instead of red pepper I think I shall do it with squash, red onions and chilli.Finally I'm an OAP and can travel free (in London at least!).0 -
A giant loaf that was trying to burst out of the oven :eek:, ten scones, and a dozen chocolate muffins and a pot of carrot and coriander soup. Might do some rolls, too.It's what is inside your head that matters in life - not what's outside your window
