I just found a recipe for lemon surprise pudding which my Gran used to make me when i was little so I'm going to pop out to get a couple of lemons and fingers crossed it comes out as i remember it :smileyhea

I made a coffee Victoria sandwich cake the other day,only my second time.It wasn't as good as the first time,but is delicious all the same.I think I know where I went wrong.0 -

sorry..im not allowed to post links on here cos im new
anyway..the one below is the one im making as it serves 6 and there are 5 in my house. If you search lemon surprise pudding in google there is also a jamie oliver one and a couple others that are very similar but serve 4.
ps..this one is on BBC Food recipes
Lemon Surprise Pudding
Preparation time: 30 mins to 1 hour
Cooking time: 30 mins to 1 hour
Serves 6
Ingredients
3 lemons
100g/3½oz unsalted butter, softened, plus extra for greasing
200g/6oz vanilla sugar or plain caster sugar
4 medium eggs, separated
75g/3oz plain flour
500ml/17fl oz milk
Preparation method
Preheat the oven to 180C/350F/Gas 4.
Butter a 2 litre/3½ pint shallow ovenproof dish.
Grate the zest from two of the lemons, then squeeze the juice of all three.
Cream the butter with the sugar and lemon zest. Beat in the egg yolks one by one. Do not panic if the mixture curdles.
Next beat in the flour a spoonful at a time, alternating with slurps of milk and lemon juice.
Once that is all in, whisk the egg whites until they form stiff peaks, and fold lightly into the lemon batter.
Pour the mixture into the baking dish, then stand the dish in a roasting tin.
Pour enough boiling water around the dish to come about halfway up the sides.
Bake in the oven for 40-45 minutes until the pudding is golden brown.
Serve hot or warm, with or without cream.

I've never tried anything like this before....I've just recently bought a pudding basin to make steamed puddings,I wonder if I could use that?
I'll have a look at the sites you suggested as well.

Just waiting for my cornish pasties to finish cooking. All of the veg in them is home grown and the beef was a woopsie, so tea tonight will be a bargin one. Had home made spicy squash soup for lunch which the kids liked. Will do my weekly bake tomorrow, not sure what I'm making yet but have just found my nan's 2 McDougal flour recipe books from the 1940's so might have a bash at something from them.I am playing all of the right notes just not necessarily in the right order

Well I didnt have time to make it yesterday as planned but I managed to rope in one of the kids to do the slave work and it's in the oven as we speak! :j
I wouldnt worry about what dish...pudding one will be fine, my gran used to just chuck it in the nearest dish so I have done the same! lol
The main thing is to make sure you have a bigger dish or roasting tin to put the pudding dish in as you have to put water in the outside dish to make the pudding create the lemony sauce inside

I am a little worried though as I put it in a 1 1/2 litre dish instead of 2 litre and it came rather high up!!!

Today DD and I made some scones, and had them with some jam and cream
Then later on I made a bakewell slice ~ this was lovely but next time I think I'll make individual round ones, better portion control:rotfl:

eating it now...yummy!
it comes out looking cooked until the spoon goes in but the squishy saucy bottom is the best bit!
