My loaf (spelt) was my best one yet. Just having some for my lunch. This time I only kneaded lightly to combine enough flour to the dough and then one rise only in the loaf fin (no knocking back).

Puss14 - I got my loaf tin from TKMaxx and it is fab

Cant believe I have only just found this thread officially bookmarked!!! :)

Anyhow I have made all our families bread for years now, dont bother with breadmakers and such I use my trusty Kenwood Machine, anyhow I have noticed that the 2 rising only really needs to be done on a loaf of bread if you are planning on having it hanging around more than a couple of days, for some reason if you only do 1 rising it seems to go stale a lot quicker than if you do 2, not a problem in my house hence everything only has 1 rising :)
