I'll post the soup recipe tonight, basically it's just b-nut squash, onions and coconut milk but I can't remember the spices involved!

Thanks for the jambalya Kavics, it does look easy! I think I might try that this weekend nom nom nom!

Going to be making a blueberry cake for OH tomorrow though as he's just got his degree results and he got an upper first! I didn't even know they did 'upper' firsts! So will maybe had a small sliver of that and make him take the rest home with him!

Happy Belated Birthday Tete! And a huge well done to your OH! Fab news! Have you made your cake yet?

Well done to all that have lost weight on their last weigh in! :T

That soup sounds lovely Birdie! I've been eating a lot of soup lately - last night it was parsnip, carrot and rosemary. Then I had pancakes! Only went half a point over so I was pleased.

I'm doing this for dinner tonight - only about 8 points, plus free veg. :)

By the way Poddle, could you please adjust my total weight loss to 2.5lbs please, even though I lost 2lb before, I want it to be the same as my chart I have at home which only shows my recent loss. Does that make sense?! :o

    Butternut Squash and Coconut Soup

1 medium onion, peeled and roughly chopped
    2 garlic cloves, finely chopped
    1tsp ground cumin
    1 tsp ground coriander
    1/2 tsp hot chilli powder
    1 medium-large butternut squash (about 900g)
    1l cold water
1 vegetable or chicken stock cube
400ml can reduced fat coconut milk

    1. Mist a large pan with oil and place over a low heat. Add onion, garlic and spices. Cook gently for 8-10 minutes stirring until the onion is soft.
    2. Cut the squash into 2cm chunks. Pour the water into the pan with the onion and add the stock cube and squash.
Bring to the boil then reduce the heat and simmer for 10 minutes, stir occasionally until the squash is soft. Remove the pan from the heat and add the coconut milk. Blitz until smooth.
    3. Return to the hob and warm gently. Add more water if it seems too thick.

    Makes 6 servings. :)

  • Thanks for that Birdie! Might make up a big batch of soup on Sunday night :)

Hi Zig, you've been bit quiet lately, well done on the loss :) - what are you aiming for? Was last night's tea as good as it looks?! Nomnom!

We went to the pub for tea and I had chicken korma! Not the healthiest of curry choices I know but in my defence I did have rice rather than chips, and it was sooo goood!! OH on the other hand had a 'TRIPLE ultimate burger' - yes that's right, THREE burgers in a bun!

I've got a Tesco prawn salad today - 270 cals - and a bag of Skips. Will be having something light for tea, porridge maybe or soup...

    Hope everyone's well :)

Oooh I love spinach and ricotta lasagne!

I'm always amazed at what your OH can put away Tete! 3 burgers?!

I caved last night and had a bit of cheescake (I don't want it to go to waste!) but then I did dance like a dork on Just Dance for an hour afterwards so I hope that kind of burnt off some of it... like a couple of crumbs!

'Dance like a Dork' - I think that sounds like a good name for a game itself!

Thought I would sneak in and say Hello.Am not really following the challenge now as I have been so rubbish last few weeks. You are all doing brilliantly though, much more will power than me!

My OH always buys an extra burger at Mcdonalds alongside his large meal and he is still skinny grrr.
