Well moussaka was very good, but beware dish-o-phobes there was quite a few pans etc used.
Here's the recipe I used:
Veggie Moussaka
Serves 4
300g bag of quorn mince (the recipe recommended 500g of lamb mince)
80g uncooked red lentils (I decided to use these to make up for the lack of mince)
1 Onion
3 garlic cloves
1 aubergine cut into 1cm thick rounds
2 medium sized potatoes cut into 1cm thick slices.
100mls white wine about 4 syns (optional)
1 tin tomatoes
about 250ml (use your own judgement) of veg stock made with 2 veg oxo cubes
1tbsp tom puree 0.5 syns so between 4 negligible
1tbsp dried oregano/mixed herbs
1/2tsp of ground cinnamon
1 tsp granulated sweetener
salt and pepper
tsp of oil 2 syns (again optional)
Topping:
200g 0% fat total greek yoghurt (I only bought a 150g tub so put 50g of fat free fromage frais in)
1 egg beaten
100g feta
grated nutmeg
pepper
I used an george foreman grill to cook the aubergines, but you could just put them under the grill in your cooker, I brushed the grill with the oil and put them on until they were coloured and set aside. Par boiling the potatoes at the same time for 4/5 minutes from boiling point and setting aside. I cooked the lentils in a bit of water in a dish in the microwave to soften them up for 2 mins.
Fried the onion and garlic in frylight until softened and coloured, added the wine and let it reduce, then added the mince fried for 5 minutes, then added the remaining mince ingredients; chopped toms, veg stock, tom puree, cinnamon, black pepper, salt, herbs, sweetener and lentils, I let it cook for another 5 mins.
For the topping I cracked an egg in a bowl, beat it added the yoghurt and chopped up (crumbled) feta cheese, along with the seasoning and nutmeg.
You'll need a large oven dish for this and an oven preheated to 190.
1 layer of mince in the dish, followed by a layer of the potatoes, another layer of mince, followed by a layer of the aubergine, another layer of mince and then finally the topping. cook for about 40-50 minutes.
I just had it with some green beans, I counted the feta cheese as my healthy A...it works out as 25g per portion and you're allowed 42, so I had a bit of reduced fat cheddar today too. Minus the cheese my version came to 1.5 syns per serving, take the oil and wine out and it would be free on green, not sure about EE / Red etc coz I used potato and lentils0lbs/18lbs to get to club 100 -

My stomach is sooo bloated but nothing in it grrrrrrrrrrrrrrr
got to be careful because it will be so easy to over compensate for not eating by scoffing anything just to get it down. Don't know why I do it, I have no willpower, it doesn't really help that its not shopping day until Tuesday so I am quickly running out of free things to snack on, and I'm a big snacker! It's not weigh in until Monday evening so I suppose if I worked really hard I could turn it around? Once I get it into my head I've messed up I can't get it out

Today is EE (again!)
B - Puffed wheat (HEB) with Milk(HEA) cup of tea
L - Ham salad (peppered ham, cucumber and toms)
D - Smoked Haddock with SW Chips. Tbsp of Chilli sauce on fish (2syns)
S - toffee mullerlight with chopped banana mixed in, satsuma, boiled sweet (1syn according to my food directory) and bag of milky way magic stars 12g - 3.5syns.
Drinks - Water, 7up free, diet coke (caffeine free)
I do still have a wholegrain crackerbread to have to make up my HEB.. but i really cant eat it right now!
Total syns 6.5

Was doing an online shop on Ocado as I had a 15% off voucher and noticed they have wholewheat crackerbread. Only place I seen them before was Morrisons.
Also they got 8 activia fat free yogurts for £1.98. Bit cheaper than Asda but think Tesco have a better offer on.
Today cooked a whole chicken in the slow cooker. First time I've done that and will be doing it more often as was yummy. The cat was pleased too as she got all the skin :rotfl:
Well done on all the great losses recently. Think I am still a STS which is better than an increase I suppose, as I'm on medication which has a side effect of weight gain.:think:0 -

Hoping for a quiet night on the baby front, well he didn't scream for hours before bed tonight so thts a bonus!
Had a good day syn wise.
I'm aways following EE, never tried any of the other plans.
B: Didn't actually have anything, after the tesco run, had to come back, do the cleaning, then had the 'freedom programme' (it's a very enlightening domestic abuse course) then a house meeting! so ended up sharing a bag of monster munch with the baby (rounded up to 3 syns)
L: Jacket tattie, small tin of spaghetti, salad with fat free vinigarette, 42g half ft mature cheddar (HEa) 1tsp clover light (1syn)chicken stir fry, I made it using 2tbsp oyster sauce which is 1syn but only had half, saving the other half for tommorrows lunch so altogether (0.5syn)
Snacks: 1 morries muller(free) 1 bag flaming hot monster munch (5.5 syns)
Total : 9.5 syns.
I am going to save my Galaxy bubbles until tommorrow as I want to stay within my syn limit for today.0 -

i always do mine this way hun, if you leave it in long enough the chicken just drops off the bone
put half a pint fo water in too and i get loads of stock, chill it for a day and the fat seperates , with the chicken scraps and stock ( fat removed) i make free chicken soup, just put it in pan with red split peas, onions, leeks, parsnip,carrots, turnip, salt and peper to taste as its nearly cooked.... and cover with enough water, bring to boil then simmer for about an hour. cook some potatoes to time with soup being done and drop them in for eating. dont cook with the pots as the starch thins the soup
this makes a lush soup and very filling, and also the day after it really thickens up
if you dont use by second day then freeze it down xxx0 -
All is not lost! I think everyone has days like that, just forget it and start fresh tomorrow, the more you get stressed about it the more you will eat (or thats what i would do..:rotfl:) I find that when i am having a day when i want to eat crap, i start with a can of diet coke and a big bowl of grapes. If this doesn't work.. a toffee muller light.. and then maybe hm sweet potato wedges (green day) If you have chocolate in the house stick it in the freezer whole.. so you can't be tempted and if you are you cannot devour it in seconds

Right then, fresh start today, I sat down and planned my meals for the next few days with what I had in the cupboards, once I looked properly there was plenty to eat really (just nothing I wanted!) Thankfully there is no more chocolate here and I don't plan on buying anymore because if it is here I will eat itAlso stocked up on muller's yesterday because they were a bargain, the orange one's with choc bits in are delicious and curbed my craving
Sent the oh for more last night and they had ran out!
How about hard boiled eggs? You can not eat too many of them without feeling really really full!
Will be stocking up today, good idea, just hope they don't have any dodgy side effects :rotfl::rotfl:
