Ingredients: 2 Weetabix, 113g/4oz sultanas, 142ml/5floz skimmed milk, 142ml 5floz water, 113g/4oz self-raising flour, 1 teaspoon mixed spice, 14g/½ oz artificial sweetener (optional) 1 egg, beaten
1. Preheat the oven to 180ºC, 350ºF or Gas Mark 4
2. Put the Weetabix and sultanas in a bowl. Pour the milk and water over the top and leave to soak up all the liquid.
3. Stir in the flour, mixed spice, sweetener and beaten egg.
4. Spoon the mixture into a 454g (1lb) lined/non-stick loaf tin and bake in the preheated oven for 1¼ hours until cooked.
5. Cool on a wire rack before serving then cut into 12 slices.
I only have a 2lb loaf tin so doubled the amount of mixture to fill it, making each slice 7 syns instead of the 3 1/2 for the amounts listed here. The cake it makes it kind of like a malt loaf, very moist & rather yummy! Really really easy to make as well, something the kids could easily do.

Lost 0.5lbs which is something considering I consumed a week & a halfs syns on Saturday! It all adds up I suppose!0

I got weighed lunchtime - i have lost another 11lbs the last 2 weeks!
So in 6 weeks i have lost 24lbs!! Only 4lb to go and i've lost 2 stone :j :j :j :j
I've never lost weight so quickly!!
Today is original day
B - 2 x sunnybisk (HEB) with chopped banana and milk (HEA)
L - Chicken thighs, w/g crackerbread, cucumber and laughing cow cheese (HEA)
S - mullerlight yog, 4x white choc mikado (1/2 syn per stick!!!) melon and grapes
Dinner - DOMINO'S!!! I feel less bad about having a slice of pizza now after my loss this fortnightAll hail to the sale!!!!!! :beer:
