Fromthe OS Board;
Chunky pea and ham soup
2 Gammon shanks
300g green split peas soaked overnight
2 large onions
1 bay leaf
Put all the ingredients into a large saucepan with 2 litres of water, bring to boil. Then reduce to a slow simmer for 2 hours, topping water as you go. There should be about 1.5 litres of thick soup at the end. Take out the gammon, remove the skin and bone and pull into chunks. Scoop out the onion and whizz to a paste in the food processor with a little of the soup. Stir back into the soup along with the ham. Serve with coarse black pepper
Nice os recipe, i thought i would share with you, any leftover ham is lovely in sandwiches, and is ideal in the SC, no added fat so nice and healthy.

did somebody say ice cream! are you using an ice cream maker for it or is there a way you can make it without, because i'd be very interested
Here's my food diary for today:
Green Day:
Breakfast - 28g Shreddies (HeB) & 180ml SS milk (HeA)
Snacks - banana & grapes
Tea - Jacket Potato with Cheese (HeA)& salad
Afters - ASDA yoghurt (1.5) apple
when I get hungry later on I will have either: egg on toast / ryvita’s / mugshot.
tomorrow i'm going to try my hand at making some soup!! Going to have some butternut squash in it. I don't know weather to put low fat cream cheese or 0% total greek yoghurt in it. Some recipes have got potato, celery and carrots in them, but seeing as I don't have any might give them a miss. Hopefully it won't take anything away from it. Anyways, I will post my results tomorrow, hopefully I will not make a big mess of it :rotfl:

Here is the recipe I use - the beauty of BNS soup is that you don't have to peel the darn thing, just whizz it up, the peel helps thicken it!
Butternut Squash Soup
1 large butternut squash
1 large onion
Frylight
2 pints hot water
1 teaspoon curry powder
1 teaspoon ground ginger
2 vegetable stock cubes
Very low fat natural yoghurt (optional)
Peel, de-seed and chop the squash into 1” chunks.
Dry fry the chopped onion in Fry Light for 2 mins in Frylight.
Add curry powder & ginger and cook for a further 1 minute.
Stir in the cooked squash and add the stock cubes & 2 pints of water
Bring to the boil, and then simmer for 30 mins.
Puree in blender and serve with a swirl of low fat yoghurt if liked. When life hands you lemons, ask for tequilla and salt and give me a call!!!0 -

I am apparently getting an ice cream maker for Mothers Day - if any one has a good SW friendly recipe I would appreciate it.
Marion:)

Thanks Peachyest for the post about the Mullerlights - we don't live near an Asda but I can get my Mum to pick some up for me! At that price they're a bargain!
Delicious days is my favourite recipe book too, so many ideas in there for such a small book!

- Place in the freezer and lightly whip approximately every 30 minutes to break down any ice crystals that are forming. Your ice cream should be ready in a couple of hours
