    anyone got any ideas for using up lemons?

    bought some for a party for drinks and got a fair few left
    Not setting myself any comp targets this year, didnt seem to work last year!!! £120.98/£2008
    2009/ maybyliene eyeshadow, rimmel polish, loreal foundation, Glamour: hairbrush
    boots card =2625
    quidoco= 110.00

    If you search for Mary Berry Lemon cake tray bake, that is fab. Uses up quite a few lemons. As for lemonade try this:

    Ingredients:
    6 Lemons
    1 cup Sugar
    8 cups Ice Water
    1 cup Boiling Water


    Directions:

    Squeeze juice from lemons into a bowl. Set lemon rinds aside; strain lemon juice into a large pitcher.

    Add sugar and ice water; stir until sugar is dissolved.

    Set aside. Place lemon rinds in a bowl and add boiling water. Let stand until water is cold. Discard rinds, add water to picher and stir well. Refrigerate until well chilled.

    The lemonade recipe I can look up but I make mine according to what I have.

    Zest and juice of 3-4 lemons 2-3 tblsp of sugar in a jug and add 1 pint of boiling water. When cool transfer into a screw top container I add more water at this time as it needs more than 1 pint but its easier to judge when you can taste it.

    EDIT: I don't strain mine until I pour it.

    Lemon is great for seasoning chicken prior to cooking - makes it lovely and tender!

    home made lemon curd is nice. I expect there is one on here somewhere, but if not I can post the old one that I use (v. old, don't know where it originally came from, but always works) if anyone is interested.

    Slice them up like you would to put in drinks, freeze them in a single layer on a tray, then when they're frozen, put them in a plastic box in your freezer and use them in drinks instead of ice cubes.
