    This is the pud I did yesterday which would use up 3:
    Whisk 10floz dble cream, stir in one can of condensed milk. Add zest of 3 lemons and their juice [do it bit by bit though as you may find it too sharp with all of it in. Grate some choc on top and chill.

    Hi,

    My DH's all time favourite dish is lamb with lemon. I use neck of lamb cubed, fry it off in some olive oil and then add fresh rosemary, juice of 1-2 lemons (depends on how many you're catering for) and then pop in another 1-2 lemons (depends again on numbers) chopped into eigths. The lemons caramelise and are gorgeous. Lovely with cous-cous and ratatouille.

    You could probably use lamb chops too.

    I made this last weekend with a crushed gingernut biscuit base - Lemon Ginger Crunch!!

  • A twist with lemon curd

    3 heaped dessert spoons canderel
    grated rind and juice of 1 large lemon
    1 large eggs
    2oz fromage frais..low fat

    Put zest and candarel in a bowl. Beat lemon juice eggs and pour over canderal and zest. beat. Pop in mico on full power 30 secs, stir, repeat step this until it turns out like a custard texture. Cool and beat in fromage frais.

    This is free if you are on the slimming world diet.
    Also lovely on top of desserts and yogurt. Can be spread on bread and butter or toast.
