The chicken should be fine to use today. My rule of thumb for chicken is three days after it has first been cooked, providing it's been cooled quickly and kept properly refridgerated. You'll find more opinions on this thread:

If I use previously roasted chicken in cooked dishes I like to add it towards the end and heat it until piping hot then serve pretty much immediately because it can go a bit 'stringy' when being re-heated. I often use leftover roast chicken for fried rice, risotto, in a chicken and leek pie, chicken and broccoli pasta bake or to make chicken and veg soup. Also remember to save the bones to make stock.

Heh heh! Me too! Chicken and stuffing sandwiches with the very last of a very tasty bird.
I'll be making soup from the carcass for tonight's dinner. It should be fine OP, but trust your nose. Give it a smell.

i'd be happy to use it today, but prob be unsure any longer than 3 days tbh.
whenever i buy a chicken i always plan on it being used for 3/4 meals depending on size of it. first day will be roast, second a pie, third a risotto and 4 will be a curry . but i wouldn't leave it longer than that. if i had more meat than we'd eat over 4 meals then i'd freeze it.0 -

I am busy making a chicken soupy stewy thing, and browsing through the links - I think when my new slow cooker comes tomorrow, I shall be getting another chicken and seeing how much I can get out of it - inspirational!!

don't forget you can cook a chicken in the slow cook. ( easier if it an oval one) and then the meat just falls off the bones and i find i get so much more meat of , than i would if i normally roasted it.0

I can vouch for this , my sister invited us all round for sunday dinner a few weeks ago , making 8 people in total:eek: bless her she had only bought a 1.5kg chicken and was panicking that it wouldn't be enough meat.My middle son took charge and plonked it in her slow cooker with a few bits and bobs ,once it was cooked he stripped it right down and she was more than amazed with how much meat he had got off it..He finished cooking lunch with her made some pigs in blankets and loads of veggies ,and some yorkies etc.It fed all of us .:)Paul Walker , in my dreams;)0 -

Hi gailey,
My rule of thumb is three days max, providing it's been cooled quite quickly and kept in the fridge. I definitely wouldn't eat week old chicken, especially as you are pregnant and your little ones are quite young. I would bin it if I were you.
