    Hi Homealone,

Providing it's been chilled quickly and kept in the fridge I think cooked chicken is ok to keep for three days so it should be fine to eat on Tuesday. There's an earlier thread with more opinions that should help so I'll add your thread to it to keep the replies together.

Not sure how but have 4 packets of cooked chicken pieces in fridge. I know I could freeze then but was thinking of making Chicken Fajitas with them tonight, have 7 for dinner.

Only problem is I usually use fresh chicken when making them and want to know can I use cooked chicken in them instead?

Never made fajitas but lots of people use cooked chicken for all sorts of things (a la rubber chicken). I had stir-fry last night using cooked chicken pieces and it was fine. Just needs warming when cooking with stir-fry veg rather than the time it would take to cook from raw so I guess fajitas would be the same. Good luck!
  • Cooked chicken is perfect for adding into soups, stir fries, add to gravy and veg as a pie filling and curries.

Yes you can, just make sure that they are heated thoroughly, i.e if it is hot to hold then its usually ok.
Be careful though not to cook them for too long otherwise they will dry out.

For Fajitas i would fry the onion and pepper till it starts to go soft, then add the chicken and spices and fry up together for maybe 5 minutes.
Serve in hot Fajitas with cheese and salsa.

    Hello :-)
I have had a quick search but I'm useless at finding things lol. I cooked a chicken on Monday, how long will the meat and stock last in the fridge and if I have been rubbish and not frozen it straight away can I freeze it now?
    Thanks in advance

I usually go for a limit of three days on cooked chicken in the fridge, before I either eat it or put it in the freezer. Yours should be fine to eat today (both chicken and stock) or put them in the freezer - personally I wouldn't leave them in the fridge for much longer.

    HTH. :)

Thanks CCP I was hoping that would be the answer and I hadn't spoilt my attempt at OS by leaving it too long!

I think you'll find that even cooked chicken bought in the supermarket has a shelf-life of at least a week. I'm not a meat-eater any longer but I'd have eaten home-cooked chicken long after three days in the fridge, if I could have resisted it, of course.
