    I have shepherdess pie filling taken from the freeze (BBC Good Foods veggie shepherds pie recipe) with sliced potatoes on top. Never tried a potato topped pie in there (apart from mash) so will be interesting to see how it works out.

    I've been Money Tipped! Debt-free and Proud!
    In my SC today I have Butternut Squash, Coconut and Lime soup.
    We aren't having it until Lunch tomorrow, but thought I'd make sure it tastes OK.
    The FB group that I got it from says its amazing, so fingers crossed!

    It turned out beautifully!


    I chopped up a whole butternut squash (it was a small 1), an onion and 1 red pepper. Add that to the Slow Cooker with a large tsp of cumin and some lazy chilli (or fresh, whatever you have is fine).


    Crumble over a veg stock cube and put enough water so that the ingredients are half covered.


    Season with S+P and cook on Low for 4-6 hours, until soft.


    Once cooked, blend with a stick blender (still in the SC) and add some desiccated coconut, the juice of 1 lime (pr bottled lime juice) and crème fraiche (or yogurt or double cream).
    Return to Low for an hour.

    Last night I had a little bonfire do, so I did TVP (about three years out of date...but nobody was any the wiser ;) ) chilli which was a roaring success.

    Today it's full of peelings, egg shells, stale bread and other bits for the chooks to have before they go to bed.
