I have shepherdess pie filling taken from the freeze (BBC Good Foods veggie shepherds pie recipe) with sliced potatoes on top. Never tried a potato topped pie in there (apart from mash) so will be interesting to see how it works out.0

We aren't having it until Lunch tomorrow, but thought I'd make sure it tastes OK.

 It turned out beautifully!
I chopped up a whole butternut squash (it was a small 1), an onion and 1 red pepper. Add that to the Slow Cooker with a large tsp of cumin and some lazy chilli (or fresh, whatever you have is fine).
Crumble over a veg stock cube and put enough water so that the ingredients are half covered.
Season with S+P and cook on Low for 4-6 hours, until soft.
Once cooked, blend with a stick blender (still in the SC) and add some desiccated coconut, the juice of 1 lime (pr bottled lime juice) and crème fraiche (or yogurt or double cream).
Return to Low for an hour. 0 0
