    I put a bacon joint in mine with Apple Juice, it was yum, will do the other half this week, it was really juicy.

    I have mexican in mine. chicken thighs, can of sweetcorn, can of kidney beans, can of chunky salsa (hot), i quickly fried off some onions & garlic with a tbsp of mixed herbs and added to sc (last time I didnt fry it and the garlic smell really came through and it was awful) I also added lime zest and lime juice and a tsp of chilli powder, cumin, paprika and S&P to taste. (You can use taco seasoning instead but I didnt have any!). It's on low all day. When I get in at 6pm I will add some grated cheese and leave it on high for another half hour. I plan to serve with tortilla and sourcream. You can also wrap into enchiladas and bake it or serve it over rice.

    Then tonight I am doing a carrot & cheddar soup for lunches, I've got loads of carrots to use up.

  • i've got a big bumper pack of marinaded chicken pieces in my slow cooker today. Was a yellow sticker bargain from coop last night.Theres a few drumsticks and a few thighs, but the bones and grisly bits are worrying me TBH.

    Does anyone else cook these in slowcooker?? (think they are intended for oven them BBQ)

    I'm hoping i can easily de-bone them without much fuss??

    Here you go, it is lovely. I posted it in to the soup recipe thread a few days back.

    Carott & cheddar soup.

    Knob of butter
    1 onion
    4 carrots
    1 medium potato
    1l approx of HM chicken stock
    150ml milk
    100g mature cheddar

    Fry the butter, onion, carrot & potato for around 10 minutes until the onion is just passed soft.
    I then put this in to the slow cooker with the stock & leave on low overnight.
    In the morning whizz up with a blender.
    Add the cheese & milk just before serving when hot.

    Serve with home made crusty rolls buttered.

    I thought I'd post this because I couldn't find a recipe on the thread for it.

    I love, love love looooooooooovvvvvvvvvvvvvve my butcher:j I went in yesterday to get the fortnights meat (which I buy in packs of 4lb) and Oh joy off joys he was having his seasonal freezer clear out. So in my slowcooker today I have 1Kg of pheasant breasts which cost me £3:j I have bunged in carrots, onions, leek, swede and some stock. We shall have it tonight with roasties, I shall then divide up the rest and make a pie and some soup:T I really can't stress enough how you can get some really good deals from your local independent butchers, if you are loyal (mine has a loyalty scheme) and can get a bit of banter going. He often tips me off about good deals and 'stuff out back' "if you don't mind waiting Darlin" :rotfl::rotfl: The same with my fishmonger too:j

    Thai Pork Soup

    This is the recipe, my adjustments are afterwards!!
    150g Pork Mince
    1 Garlic Clove, peeled & crushed or finely chopped
    Small piece ginger, grated
    1 lemongrass stick
    1 red chilli, finely chopped
    1tbsp green curry paste
    150ml coconut milk
    1 litre boiling water
    4 large spring onions or 6 small, finely sliced

    Fry off the pork mince for 5 mins until lightly browned
    Add in the garlic, ginger, lemongrass (sliced in half lengthways), chilli & curry paste & fry for 2-3 mins.
    Put in slow cooker and stir in coconut milk
    Add 1 litre of boiling water & cook on low for 6-8 hours.

    I used 2 tsp jarred ginger, and 1 tsp jarred lemongrass. I put in 250g of pork mince, and might fry off some more when I get home and put it in if it still looks like not much!!
    The water seemed like an awful lot!!!! I put in the coconut milk and 250ml of boiling water this morning.
    When I get home, I'll add in some spring greens which are just about still fresh (!). I'll see what the liquid levels are like and might add in some more water and maybe some more coconut milk depending on how it tastes.
    About 20 mins before serving I'll add in the spring onions and some straight to wok noodles, and change the liquid so its more of a soup consistency, by adding more water and/or coconut milk.
    Will probably also serve with some crusty bread to mop up the juices.

    Fingers crossed as ever!!!! Can't see it taking 6-8 hours to be honest, but I'll be leaving it for that long and will see what happens.

    I think this is a regional thing (I'm in Nottinghamshire), but if anybody has a Home Bargains or B&M store near to them you MUST pop in.

    I get all my jarred garlic / ginger from there and they are also really cheap for things like jarred red peppers, jalapenos and gherkins. Along with loads of toiletries.
