Yesterday I did Butter Chicken - very nice!

Used I Can't Believe instead of butter and only a spoon of cream left in pot so (by default) wasn't as rich as it could have been, but OH didn't notice and all the flavours were sooooo good. Chicken pieces literally fell to pieces too.

In my sc today i have a large turkey drumstick! It's so big the lid won't close so i had to put a bit of foil on top then the lid. Hope it works... This is my first time cooking it as i read a thread on here and thought i'll try since it's so cheap! I laid it on a bed of onions, carrots, celery, with a bit of stock and rosemary. Fingers crossed! Hoping to serve with some roast potatoes. :)

Bolognese for lasagne in my sc today!
  • I cooked lamb shanks yesterday with curry spices, onions and tomato puree, today the left over juices have had carrots, celery and pearl barley added to make soup.
  • I was given a slow cooker as a christmas gift and i've only used it twice so far, once to cook a beef joint and once to make chicken wings from a slow cooker recipe book - the wings turned out amazing in terms of texture but the flavour of the sauce they were cooked in wasn't great

there are some wonderful ideas on this thread, i'm so glad i revisited the money saving forums! the slow cooker will be brought out of the cupboard tonight or tomorrow to try some new meals for sure, thanks for posting everyone!

Tonight we are having beef skirt slow cooked with swede and potato, lots of black pepper and a couple of bay leaves from the garden - sort of a pasty without the pastry. And with a bit of added onion and a carrot (which are not in a pasty but I threw in anyway).

    Today I have beef stew.

put sliced potatoes in the bottom (first time I've tried this),
fried stewing steak off with some onions and a bit of garlic,
tipped this on top of potatoes, then added a carton of basic chopped tomatoes,
then poured in about 400mls of beef stock with 2 spoons of flour mixed in to thicken and a shake of salt & pepper.

will be adding cabbage & peas to serve.
