    Hi all,
I was given a slow cooker for christmas, and am planning to do a beef casserole in it tomorrow. I'm going to use some beef, onion, carrots, garlic, potatoes, pearl barley and add dumplings at the end.

It will need to be on for about 10 hours on low.

So... how much liquid do I need? I've got beef stock, passata and maybe white wine (open bottle leftover from new year)? I'll hopefully be making enough for 2 adult dinner portions and leftovers for 2 lunch portions for Friday.

Going to put it all in tonight ready to switch on before I leave for work in the morning so I'd be really grateful for any pointers this evening please :)

Usually I'd just barely cover the meat as the food will settle down a bit & it's not like cooking on the hob etc where the liquid will evaporate. However, I'm not sure if the dumplings will soak up some liquid as I've never added them. Probably better to have a little extra liquid as you can always freeze the extra for gravy etc. Easier than trying to add more liquid at the end & thickening it up. Maybe someone else will know? Would love to hear how it turns out. :)
  • is pudding rice.

I'm going to add sultanas through cooking and flavour with cinnamon.

  • After some advice from some OSM'ers, today I'm cooking 2 lamb shanks (the frozen cheaty ones with the minted gravy) that I found reduced in Aldi this week. I've defrosted them over night and have placed when on some chunky carrots, potatoes and an onion. I rinsed the bags out with a little water to get the left over juice out. It smells lovely already, just keeping my fingers crossed.

Two browned duck legs with some potatoes and leeks - got the legs for practically nothing so thought I would try them - the kitchen smells yummy :D
  • Carrots, red lentils, some stock, some herbs, and an onion. Will be blended up for soup when everything's soft.

I'm new to my slow cooker, only got it last weekend but i'm already in love with it! Lol

Today I made a smoked bacon and leek risotto in mine, and it's so tasty, I'm very pleased with myself :-)
