sausage casserole today
gently fry leeks & garlic until soft
add sausages chopped into 4 bits per sausage, fry until brown.
Bung in s/c
add carrots & mushrooms (corgette subsituted as no mushrooms)
dash of worcestershire sauce, pinch of herbs, bay leaf
passta (or tin of tomatoes and squeeze of tom puree)
handful of lentils (or broth mix that I have in cupboard)
tin of borlotti or cannellini beans (i missed this out as OH is not keen on beans in casseroles) Will probably serve with Baked Beans as they are acceptable to both of us and quick to heat.
Add stock (used beef) until desired consistency
Go to work
Come home and serve0 -
Can i ask (sorry if it sounds stupid!) do you need to cook frozen veg before you put it in the slow cooker? I normally use fresh veg but today at asda saw they had their frozen casserole veg packs on offer so took advantage!

I pre cook everything before I put it in the slow cooker, but with frozen veg, I would saute them in a pan with onions just to get some heat in them, because you will lower the temperature of the other food. When they are hot, I would add them to the rest of the food.
I always pre heat the slow cooker on High for fifteen minutes before adding the food, and I always make sure the food has reached simmering point.0 -
Liver and bacon for pate in mine tonight.
Lambs liver, onions, bacon, tomatoes and some s&p.
When its finished cooking i`ll replace some of the liquid with softened butter and blitz it then pop into ramekins and freeze YUM!

thank you andy i was uncure as to what to do and what you have advised makes sense! I preheat my slow cooker anyhow it goes on high for 30 mins before i add any food. Sausage casserole again for us tonight ive got some sausages in my fridge that need eating asap!
Simple recipe really - sausages, tin of chopped tomatoes, paprika, chilli powder, 2 chicken stock cubes, a bundle of casserole veg (carrots, leek, onion, swede, turnip dont think theres owt else in there!) dash of tomato puree and a little water to make it more 'saucy' will serve with mash and home made bread. makes my mouth water thinking about it!
Goes on high for 1 hour and then medium for 6-7 hours
For those of you on a weight loss initiative like i am (or even if youre not i suppose) slimming world magazine have a 48 page recipe book with some good recipes that could be done in the slow cooker like beef cobbler and lancashire hotpot. i bought it yesterday cant wait to try some of them!

I discovered a packet of mince in the bottom freezer draw under steamed veggies...BB aug 2010 oops,so i defrosted it today,gonna make up a bolo sauce and freeze again.
