Last night I cooked a different (lower fat) version of fish pie. Instead of bechamel based sauce it used stock, low fat garlic & herb cheese and cornflour for thickening - instead of just potato, the topping included swede.
We really enjoyed it and not a drop of oil or knob of butter in sight. Now considering OH doesn't like swede and usually has lashings of butter in his mash he really enjoyed it and asked me when we were going to have it again! Result!Mortgage Free x 1 03.11.2012 - House rented out Feb 2016

That Lamb kofte Tagine sounds lovely motherhen think I will try that this week.

Love this thread as its inspired me to try something new or a twist on the old favourites.Does anyone have a fool proof boulangere potatoes recipe I love them but the potatoes are never properly cooked. In my last attempt they were cooking when the oven was on over 2 days and were not nice.Still dry and in this instance brown !! TIA0 -

As mentioned above - I made the Sweet Potato Gratin from Cook Yourself Thin. We really enjoyed it - it's a bit different but very tasty. It lasted two days.
6-8 sweet pots
3 finely chopped garlic cloves
some grated ginger
1 finely chopped red chilli (I used Lazy Chilli)
50g butter
thinly sliced spring onions
250ml veg stock
seasoning
Peel and thinly slice sweet pots. Melt butter and add garlic, ginger and chilli along with pinch salt. Pour over sweet pot slices and sliced spring onion. Layer in dish along with a little seasoning. Pour in the veg stock. Bake at 180 for 45 mins and then do a further 15 min at 200C. [I cooked it in my Remoska rather than in the oven so could not vary the temperature but it was still really tasty.]
First night I served it with salmon marinated in oil, lime juice and ginger.
Second night I served it with chicken.0 -

This seems like an interesting challenge. Can I join in please? My cooking skills are a little limited but this month so far I have cooked focaccia from "Dough" by someone Bertinent, and on sunday cooked bubble and squeak for the first time
I know b&s is easy but I hadn't done it before!
I also made a dish called gabriel potatoes from mum's slow cooker book basically layers of sliced potato, mix of herbs, onion, chopped bacon, and cheese, all layered up and with a mix of egg and milk over the top. Was quite nice but the egg set funny round the sides so it looked a bit dodgy!!
I've got to cut my budget this month and have mostly planned the meals for the next 2 weeks but will have a look through all the recipe books and good food mags and find something new for next week
