This receipe is a fav of our house
175g/6oz marg or butter
350g/12oz sugar
1 tsp vanilla essence
3 eggs
125g/5 oz plain flour
1 tsp baking powder
50g/2oz cocoa powder + pinch of salt
Melt butter, then pour in bowl, mix in sugar and vanilla. Add beaten eggs slowly to butter mixture.
Sift flour, baking powder, cocoa and salt and mix all together.
Pour mixture into 22x30 cm / 9 x 12 inch greased tin. Cook at 180c/350f/gas 4 for 40 mins.
If you want you can add 175g / 6oz of walnuts or in my case, choc chips or Smarties

Chocolate and cranberry brownies
Ingredients
4 whole eggs
175g caster sugar
160g dark chocolate
40g syrup
110g butter
40g plain flour
50g dried cranberries or sour cherries
finely grated zest 1 large orange
Preparation
1. Pre heat the oven to 180 degrees C gas 4.
2. Line a 8 inch x 6 inch tin with baking parchment.
3. Melt the syrup, butter, sugar and chocolate together gently in a pan - don;t allow to boil!
3. Whisk the eggs into a bowl, then add the melted mixture, mix well.
4. Add the flour, cranberries, orange zest and mix well, but do not over work.
5. Pour into the prepared tray, then pop into the oven and cook for 25-35 minutes.
6. Once cooked, remove from the oven and cool then chill well before trying to cut.

6oz self raising flour, ( or gluten free/wheat free flour, i use this)
6oz margarine,
10oz brown sugar,
4 eggs,
200g chocolate- half chopped up
pinch of salt,
drop of vanilla essence
1) Mix eggs and brown sugar together- put aside.
2) Melt half the chocolate with margarine in microwave.let cool slightly.
3) Add the egg/sugar mix to the choc/margarine mix and beat well.
4) Add the flour, salt, and vanilla to the mixture and finally the chopped up chocolate.Mix well.
5) Put into a lined tin at gas 4 for about 25 minutes, should be slightly soft in the centre.
6) Before the children/hubby arrive home hide it in an air-tight tin!
7)Very nice warm with a blob of cream on top or with vanilla ice-cream, can be warmed in the microwave0 -
Hello
I made brownies earlier. When they were ready, I left them in the tray to cool down (like the recipe said to do). They looked perfect.
When I took them out the oven, I had to take Ds to nursery, then I had to go into town to do some Christmas shopping so when I came back in a couple of hours later, I started to cut the brownies into squares, and the middle is really soft and gooey as if they arent cooked properly. They wouldnt come out of the baking tray property without falling to bits.
I am at a complete loss with this baking malarky.
Ive put them back in the oven, covered them with tin foil so the top doesnt burn. do you think this will cook the middle and they will be okay?0 -
I should think they will be fine. I actually think they taste better when they are gooey and not too dry.Do what you love :happyhear0

Mine always come out like that.
Don't know why though. I've tried different temps, different shelves in the oven. Makes no difference.
They still taste good though. So I wouldn't worry.;)0 -
Brownies aren't supposed to be baked till a knife/skewer comes out clean - they're supposed to be gooey and yummy in the inside :drool:0

I agree, they're supposed to be gooey in the middle. I made some the other day and let them bake for 5 mins too long and they weren't gooey enough for my taste.
If you like them drier, cook for longer;)0 -

I will just let the kids have them with ice cream for pudding tonight, and tomorrow night too.
I was going to cut them up and freeze them, but, they are too gooey for that. the dish I baked them in is too big for the freezer and is ceramic and I dont know if its suitable for freezing.

Are they so gooey you can't cut them up?
I tried brownies a couple of times, and they were dry and over cooked. BOO I need a failsafe delicious recipe!:oA little nonsense now and then is relished by the wisest men :cool:
