I'd just cover it with a biit of baking paper and leave it. It cuts far better when cold anyway, and you really want a nice crust to form on the top I use a very thin wire from an old cheese cutter to cut up brownies neatly.Better than a knife unless you have a very sharp on

I tried the most delicious brownie the other day at a meeting. It was fudgy and gooey inside.
Just wondering if anyone has a recipe for one like this, Ive had a search around the net but most look dry.0 -
I make lotte duncans Christmas brownies off UK food (I think) but leave out the mincemeat and break up a cheap bar of chocolate in to small pieces and add that instead. They always come out gooey for me I have also added desicated coconut to the recipe as well.0

I use the river cafe recipe it is fab and always comes out perfectly. The most important thing to remember is that a brownie can be too dry if overcooked but it can never be to gooey. Trust the recipe and take them out when it says, you will think they're not ready but they will be!0

They can be either fudgey or cakey, just cook them for less/more time - only thing is I think you need a bit of a bigger tin than they state. It says to use a 20cm square tin - I usually double the mix and use 3 tins which are about 20cm square each... so I guess if you're making one batch you could use a 20 x 30cm.
The orange makes them amazing too, and I always use chopped chocolate, not choc chips cause I want nice big chocolate chunks!0 -
I always use this recipe from Nigellas How to be a domestic goddess. Not cheap or healthy but gorgeous, just remember they carry on cooking after coming out of the oven.

I find the trick to gooey brownies is to just take them out of the oven early.0
