    Can anybody help me?

    I have been asked to make a rectangle cake that will serve 60 people, based on the servings I would get from a square cake, i've worked out i'll need a 15" by 9" or similar to get the same portions. I can't find a tin this big. Would I be ok just making two smaller cakes and sandwiching them together? Have I worked out what size I need correctly?

    Im no good at working out portions and cake sizes, but I would pop to the bakers and ask what size cake you would need for 60 portions. Sorry I couldn't be of any more help. Do you have a cake decoration supply shop that hires out tins?

    Why dont you look for a 12" Square.... That should be big enough and cut the portions small.

    I've found somewhere that hires cake tins, only £4, I thought she was going to say way more than that! I am just going to get a square and make it rectangle.

    What cupcake cases do you use?

    Do you actually get cupcake cases? or do you use the muffin cases?

    Do any of you use the silicone cases and if you do, how do you find them getting out of the case? and do you thne pu them in a fresh case?

    Not sure I can afford one just yet but they do look really good.

    cupcake courier got back to me, and that is the site they told me about, but I see they are all out of stock.

    I think I might get the other one that holds 24, but get 2 then I get 48 in one go and works out same price. Think I will get some of the boxes as well. That site had them at a reasonable price.

    I have a silicone muffin tray from Sainsburys but don't use it as it makes them quite a funny shape so they don't fit into cases afterwards.

    I have also got a 12 muffin tray that I got from Wilkos that is okay but a bit small, can't use the big muffin cases in it.

    I have also got silicone cases both normal and mini but I find that they don't look right in the cases afterwards although they do pop out of the silicone cases very easily.

    So at the moment I just use the 12 muffin tray from Wilkos and use smaller cases than I would like to use.

    When I started purchasing things for the business I decided a cupcake courier was a bit out of my price range, especially considering I'm baking for farmer's markets etc - I'd need at least 3! So instead I opted for http://www.ryman.co.uk/0161207220/Really-Useful-Box-20-Litre/Product combined with boxes from http://www.cater4you.co.uk/acatalog/plastic-cake-containers.html for stability. Works out a lot cheaper & the container has enough height to cope with even my tallest cupcakes.

    The fruit of todays labours below; raspberry jam cupcakes! (Very hard not to eat them, must remember they're for selling!)
