    Quick question if you please?

    How far in advance do you make your cakes and cupcakes. I have always done them the day before they are needed but this thursday i need an 8" round cake and 36 cupcakes in 4 different flavours. I work on a wednesday so i'm not gonna have time to cook and decorate all of them the day before.

    If i made and decorated the 8" cake (chocolate sponge) on tuesday would it still be ok by thursday afternoon? How would i store it?

    I might then be able to get the cupcakes done on the wednesday evening as long as i have all the decorations made in advance.

    *sorry i'm always asking questions!* ;)

    I always try to do mine the day before but have been known to do them two or three days before. This is madeira though, I rarely make chocolate cake so i'm not sure. You could freeze it? Hopefully somebody will be able to give you better advice :o:)

    Same, I'd do it late wednesday evening or get up extremely early on thursday!

    Are you covering it in fondant? I always bake my cakes and freeze them well in advance. I would take it out of the freezer on the Monday night before I went to bed. Tuesday morning (when defrosted) I would fill and coat in buttercream then leave to settle for a couple of hours. I sometimes lay a loose piece of cling film over it while it is settling. Then spend an hour or 2 decorating (depending on design) put it into a cake box,go to work Wednesday and deliver on Thursday:D This is based on madeira type cake. If you are doing chocolate fudge type cake it should stay moist for ages;)

    I try to do cupcakes as close to delivery/collection as possible. Wednesday night will be fine and as you said try to have all the decs done in advance and you will have them done in no time;) Good luck!

    I agree - cupcakes I try and do no more than 1-2 days in advance, but an iced cake will keep for ages!

    If you don't have time to ice, wrap in greaseproof paper then in tin foil. This should be ok for a day or two, and should actually be easier to cover than when fresh out of the oven. I've just cut into a cake made over a week ago - it's still perfect ;)

    Baby Shower cake & cupcakes for the lovely Caroline Archer who co presents on QVC with Liz Earle. The baby shower was a surprise and we all had a fantastic day at the Duke of York store.
