Plum did you find a red velvet recipe? I have one in either the Bake-a boo book or Eat-Me.I dont think I could post it because of copy right but Id be happy to PM you (and anyone else)
About the recipe and shelf life...I use a sponge recipe called High Density Sponge.I think it was developed by a guild member and has been quoted in one of Al@n Dunn's books.It has a definite shelf life of 7 days,Ive baked them for our own use at home and they've lasted longer.Its a really versatile recipe and "accepts" lots of different flavours.If Im doing a cake for Saturday,I bake on Wednesday,wrap it in cling and foil and leave in an airtight box overnight.I torte and cover on Thursday-leaving Friday for decoration/disasters and those phone calls that say "can I collect early please".
Anyway,here's this week ends cake...the first one Ive done using an image printed on my own machine-so extra special;)0 -
No, i think you are right. I stored my xmas cake in my airtight plastic box out in the garage and the sugarpaste went even softer and the antlers on my reindeer drooped! lol
I bought the plastic box to save me having to buy cardboard cake boxes all the time. And i never find the cardboard boxes tall enough for my cakes.
you can buy height extensions for cake boxes but its just as easy to make them yourself to save money.***Dont save what is left after spending, spend what is left after saving***0 -

Unfortunately Helen this is still considered a big NO. We have a member of the guild who was fined for doing a bottle of J@ck [email]D@niels.The jist of it is if you do it-its up to you.Personally,I dont do character stuff unless its for friends or family and I am absolutely certain it wont encourage business.Its a very tricky debate.[/email]
I don't do character cakes unless the person asking can prove they own the copyright (hence I have only done one character cake for nickelodeon tv for dora the explorers birthday party at the bafta ). I don't use the pictures of this cake for any advertising as I don't want to have to turn down hoards of people asking for dora cakes ! If people want characters on cakes I send them to a*da or t*sco as they produce them under licence . It seems to be a grey area with a lot of people who think its ok to do character cakes as the evidence is eaten and they claim to make subtle changes which mean it is not a breach of the copyright. Personally I won't take the risk , I have invested a lot of time effort and money into my small business and I couldnt bear having it all fall down around my ears because I "stole" someone elses design/artwork/character to please a customer. I would equally be quite gutted if someone stole my cake designs and claimed them as their own ,so the "do unto others " motto seems to work for me here .Started my own business and loving being my own boss
