  • Hi everyone,

    Here´s how to make the chicken casserole dish I mentioned:

    You can use either a whole chicken cut up, just breasts, legs or thighs (I usually use chicken legs and thighs as they are cheaper). Use enough for four servings.

    1) Sprinkle the chicken with some sea salt and mixed herbs (e.g. rosemary, thyme, oregano or marjoran)

    2) Put some olive oil in a pan (approx 1 tablespoon), heat it up and then fry the chicken to "seal" it. This usually takes approx 5 minutes. Once sealed, remove the chicken from the pan and put on a plate until you need it later.

    3) In the same pan, fry one very large chopped onion for approx 3-4 minutes on a low heat and then add 3 cloves of garlic and continue frying (sauteeing) on a low heat for another couple of minutes. Then add 3 large chopped carrots and fry for a couple of minutes then add one large glass white wine (I use dry white wine). Stir for a couple of minutes and then add approx 3/4 pint chicken stock (I use 2 chicken stock cubes dissolved in boiling water). Leave to cook for approximately 10 minutes then add the chicken and simmer for another 15 minutes.

    4) Remove the chicken from the pan (it should be completely cooked through by now) and then blend all the sauce with a blender. It mades a lovely creamy sauce even though there is no cream in it.

    5) Pour the sauce over the chicken and serve. I usually serve this with either boiled rice or a jacket potato (or homemade chips for OH).

    Yesterday OH said the chicken was a bit tough so maybe I overcooked it but the sauce is delicious.

    well i spent yestaerday at my bruvsas it was nephews birthday we ate a bit of rubbis but played Just Dance for about 7/8 hours solid so I better have shifted some of the rubbish, arms are very sore today and i have to paper and paint bathroom

    Thanks so much, must try it sometime!!! :T I've copied and pasted it into my new recipe folder on my PC and named it 'Valentina's chicken casserole' (imaginative I know). :D

    Curlytop40, congrats on the 3lb loss! Don't worry about the blip, the important thing is that you recognised it and moved on and have reversed the damage. And you are 3lb lighter than a month ago! :beer:

    Hi all

    Well did my final weigh in for January this morning and I have stayed the same. So a grand total of 1.5lbs lost in January:mad:. I do so feel it has been a waste of a month weight wise although I should be happy that I haven't put any weight on.

    So new frame of mind for a 7lb loss in February.

    Well done to everyone else for whatever you have achieved in January and see you on the February thread.

    Maisie M, at least you lost weight!! :D I'm praying that I'll have lost weight at my WI tomorrow otherwise I will be STS for Jan!!!

    I've been out for my 2 hour walk, it was just lovely. Then I came home and had a salad roll with roasted peppers, divine. Oh and a green tea which I am told aids weight loss! I'm now happily full and will be going out again shortly for a quick visit to a friend, that'll be another hour's walk. I'm going all out this weekend to get in as much exercise as poss while the weather is lovely! :)

    poshstock, you are doing so well, still can't believe you lost over 5 stone last year. What an amazing achievement - keep reminding yourself of that every day and it will spur you on. I see you are doing £ for lb, might do the same myself. Any and all motivation is good!!! :)
